OW TO MAKE DESSERTS WHEN SUGAR IS SCARCE If you are wise you will not use your last bit of sugar, trusting to get more when the present supply is gone, but will avoid the possibility of totally sugarless days by making your small supply go as far as possible. This is the advice of home-economics specialists in the United States De partment of Agriculture. Turn to your war-conservation cook books and refresh your memory on ways to use the sugar substitutes. You will find many recipes for cakes, but most of them were built to save wheat as well as agar. We have this cause for rejoicing at least: Though must cut down our use of sugar. We still have wheat for cake making and our old stand-bys in time of sugar stringency-molasses, corn sirup, and honey-a---re still procurable. The cakes made with sirup are not just like those made with sugar. In most cases they are less sweet. They do fill an emergency need for cake, however. The following recipes use *-,.but little sugar. Chocolate Cake. 1-4 cup fat, 3 tablespoons sugar, (brown or white.) 2 eggs, 1 cup corn sirup, 2 squares melted chocolate. 1-2 cup milk, 1 teaspoon vanilla, 1 1-2 cups wheat flour, 3 teaspoons baking powder, 1-4 teaspoon salt. Cream the fat and sugar, add the egg yolks, sirup, and molted chocolate, and beat well. Sift the dry ingredie nts together and add alternately with the milk. Add vanilla and fold in the stiffly beaten whites. Bake in loaf of or layers in a moderate oven. For frosting-cook one-half cup corn sirup until it forms a long thread when dropped from a spoon. Pour over the stiffly beaten whites of two eggs and beat until thick enough to spread. Splice Cakes are Good. These little individual spice cakes, baked in muffin tins, are also very good: 3 tablespoons fat, 4 tablespoons su gar, 1-4 .sup corn sirup, 1 egg, 1-2 cup milk, 2 cups flour, 3 teaspoons baking powder. 1-4 teaspoon salt, '1 teaspoon cinna mon, 1-4 teaspoon spice. 1-4 teaspoon nutmeg, 1-8 teaspoon cloves, 1-2 cup hopped raisins. Mix in order given. No Suger Needed. Mix and drop from a spoon on greased baking sheet. Bake in a quick oven. Along this same line remember that the old-fashioned gingerbread calls for no sugar. Why not serve it more often a an autumn dessert'? Bacon has proved one of the most popular ar ticles handled by the food store, which serves this state and North Carolina as well as Charleston, and considerable interest is attached to the stopping of its sale. Only 10 (lays yet remain for parcel post or ders, no more being filled, for a time, after December 10. Tobiai and family. Aside from Thanksgiving, it was the 79th birthday of S. R. Tobias a Con federate soldier, who received severa severe wounds in the War Between the Sections. Numerous laws which have been passed regulating the use of bicycles. They must be equipped with front and rear lights of a designated color, brakes, horns and whistles. Some of the more fancy ones bear flags, coats of arms and a holder for the inevit able walking stick affected by every real gentleman in the capital. It is not uncommon to see a bicycle carry ing at least twice its original cost in equipment. But with bicycles as with automo biles there is no speed limit. Bicycles riders and their daredevil companions, the drivers of the automobile' buses continue to be terror of pedestrains.
