POINTERS for the HOUSEWIFE SOME ECONOMY RECEIPTS AND HOW TO SERVE THEM Nourishing Soups and Other Appetiz ing Dishes Prepared at Compara tively Little Cost. Some of Uncle Sam's economy re cipes are for soups-thick, nourish ing, appetizing soups that are liter ally a meal in themselves. Soup, thick or thin, stimulates digestion when eaten at the beginning of a meal. A cup of milk soup flavored with vegetables yields more energy to the body than the same amount of milk taken alone. A thick meat soup with pieces of meat and vege table soup, such as cream of tomato, yields half again as much energy as the milk; while a thin soup like bouil ion, consomme, or clear tomato soup, yields not quite two-thirds as much as the milk, and less than half as much as the thick soup or chowder. A generous serving of thick meat soup or fish chowder yields more en ergy than an ordinary port ion of roast beef, and even a moderate help ing of vegetable mi!k sou; usually furnishes fully as much body fuel as a moderate-sized rib chop of lamb. Meat and milk soups contain a con. si!erabl e amount of plrotein, an ele ment of foo.l without which the body cannot build a nd ma inta in its tissues. Soup bones, andl meat suitable for soup making, arie chea p compared to the better cuts of meat. The long, slow cooking in water necessary in soul) ma1king draws out the gelatin. fat, and other nutritive elements they contain. This stock, as the resulting liquid is cal led, may serve as the basis not only of a great variety of soups, but also oIf gravies and1( sauces, a n many he usedl for cooking veget ables, rice, and similar foods. When it is usedl for soupJ, its flavor may be variedl by adding various vegetables. It may be thickened with flour, breadl crumbs, or ok ra. This is best even i they are to be served cold. A simplh way t oserve either the Lima o string beans is to heat them and ad( butter or a well-seasoned whit< sauce. To give an occasional change of flavor add about an eighth of r teaspoonful of curry powder to a cur of a white sauce. A chopped onior browned in butter and cooked in f little water until tender gives a goo( flavor when heated with string beans Many people like string bean served with a spiced sauce made a follows: Brown 2 tablespoons of flour, mix with 2 tablespoons of sugar, 1-2 teaspoon of salt, 1-2 tea spoon of cinnamon. Add these dr3 ingredients to 2 tablespoons of meltec fat and combine with 3-4 cup of water and 1-4 cup of vinegar. Stir unti: smooth, then add the beans and heal to the boiling point. Still another way to serve sti-ing beans is to make them into a loaf Combine 4 cups of cooked rice, cups of string beans, 1 chopped re( pepper. Bind together with 2 cup: of thick white sauce. Form into loaf and bake 20 or 30 minutes. Lima beans are delicious serve( with a tomato sauce. The sauce may be added to the beans and all baket in the oven or the beans heated am the sauce added before serving. o -- CORN-3MEAL PANCAKES Pancakes made of corn or kalif eorn with a little wheat flour ar( fully as palatable and nutritious a: cakes made of wheat only. HAD TRYING EXPERIENCE Mornings Were Miserable for Mrs. Durham, but the Afternoons Brought Her More Comfort. Though she had suffered with rheu matism so badly she could not walk at times during three or four years, and had been troubled a' great deal with a number of other ailments,'Ms. J. T. The potatoes will still be practically raw and may be handled like raw peeled potatoes in prepar ing any dish, as scalloped, French or German fried potatoes, potato chips, etc. One excellent way to cook the skinned potatoes is to bake them. The entire potato, including the thin, gold en-browvn crust may be eaten. This recipe for economical peeling of potatoes wvas furnished by a housewife and tested by the United States Department of Agr-iculture. These foods combhine well. Cottage cheese has always been made in some quant~ty in the home and now the Depat 'ment of Agriculture is recom mending to dairymen that they make it as a means of utilizing the large quantities of skim mrilk. Everyone knows now that the grade of gasoline is on the decline, and that probably high-grade gas, or even the gas of a year ago, will never come back. And like a man who has been on a high-grade diet and is suddenly given a low-grade diet, many engines in automobiles now have gasoline indigestion. o The Chalmers engine digests gas probably as no engine ever before has done.
