Hints as to tho Preparation of Holiday
Dislies, Etc.
Boiled Icing.?iBoil one cupful of
granulated sugar with half a cupful
of water until it ropes when dropped
from a fork; pour this gradually ov01*
the stiffly-whipped whites of two
eggs, beating hard. Add flavoring
and use at once.
K^liqrry Barquetlos/?'Make some
little cases of puff paste similar to
tart' cases. Slew some cherries or
use the best canned fruit and put a
tablespoonful in each lit-tle case. Coy er
with wiiippe I cream flavored with
vanila or wine, and put a cherry or
two on top for decoration.
Home-made Macaroons. ?Blanch
four ounces of almonds and pound
them to a paste willi four spoonfuls
of orange flower water, which can be
bought at the druggilf's. Heal the
whites of four eggs to a si iff froth
and mix with the almonds, stirring
in ;il I he same lime one pound of
finely sifled powdered sugar. Line
your (ins with a sheet of bullered or
oiied paper and drop the paste on in
liltie round cakes. Hake in a moderate
oven.
Apple ('ream.?I'eel about one
pound and a half of cooking apples,
core and cut tlrem up thin, put them
in a saucepan with a little water and
the grated rind of one lemon. Slow
until soft, sweeten and rub through
a wire sieve. Heat half a pint of cream
until stiff, stir it into lire apples and
color with a few drops of cochineal
and pile lightly in a glass dish. Scatter
a few chopped nuts and little dabs
of currant jelly over the top. Serve
as cold as possible.
Claret Jelly.?Soak one on nee <?f ;
gelatine in a half pint of cold water, I i
then boil until dissolved. Take one | ;
quart of (daret wine, one pint of cur- \ i
rant jeliy, Iliree-quarlers of a pound j
of sugar. I'nt I lie gelatine with this ^ i
mixltire and stir all together over the , i
fire until thoroughly incited. Heal
the whiles of three eggs and stiri*
briskly into the jelly, boiling it two'i
minutes: iviiiov from the lire and let
sla.nl for two minutes, then strain!,
through a hag and put in glasses. ;

at a time, beating well after each one. i ,
Sift one and one-half pints of flour L
and mix through it one and one-half k
teaspoon fills of baking powder, adding
this to the previous mixture, and
also one cupful of stoned raisins,
half a cupful <>f chopped citron, hail"
a cupful of milk, little ullspicc and '
nutmeg, and one cupful of very
strong eolTec. Mix into a smooth batter
and bake.
Card Cake. ?Mix together one cupful
of molasses, one whole egg and j
yoik of an extra one, four lablespoonfuls
of butter, half a cupful of sour
milk with one level teasuoouful of j
soda stirred in two cupful ; of flour I '
and a pinch of salt. Mix this well!
