Stuffed Chicken. One boned chicken, half a pound of leanvael, half a pound of ham, three tablespoonfuls fine bread crumbs, yolks of two hard-boiled eggs, one ta blespoonful chopped parsley, half a teaspoonful white pepper, a little grat ed lemon rind. Bone a chicken without breaking the skin, chop finely the veal, ham and yolks of eggs. Mix all well to gether with the crumbs, parsley, lemon rind and pepper, pack into the fowl, sew it up, and stew gently for two hours. Serve with white sauce poured over. This is good cold. To Clean Chickens. If you scald a small chicken the skin comes off and the sweet meat is liable to stick to the frying pan. Pull off all feathers, use tepid water and the down is easily picked off. Use a small brush to scrub the skin clean. Split the chicken down the back or through the breast, spread it flat and bake whole. If the skin comes off the fowl, roll it in flour and use plenty of lard and butter in the baking pan or skillet. It is less liable to burn when there is sufficient grease in the cooking vessel.
