It is then raised to a temperature of 90° Fahrenheit, when enough rennet is added to coagulate the mass in about thirty minutes. The curd is then cat crosswise and length wise of the val with a gang of steel curd- knives. Soon after it is turned with tin shovels frequently for an hour, when it is left for the whey to settle. RAGS! is a reporters and their salaries Since John Swinton inn le those astonish ing statements to the Elba cation and Labor Committee about tho pay of newspaper men I have made several inquiries in Printing House square as to §5,000 reporters, $25,000 correspondents and $500,000 editors, but they don't seem to bo known in that quarter at all, writes a correspondent to the Hart ford Times. The general impression there is that they exist only iu Mr. Swiuton’s im agination. To the best of my information and belief they never did exist in Printing House square, though that’s where uine- teuths of tho newspaper men are to be found. Should Mr. Swinton’s remarkable statements cause a rush of young men from the various country cross-roads to New York, with aview to become willionuaircs by newspaper work, I fear the young men will be sadly disappointed. They will find that $5,000 reporters, $25,000 correspondents and $500,000 editors are not in demand. They will discover on the contrary, that the realities of Printing House square are very different from the picturesque ideali sketched by Mr. Swjnton. The entire Canary family is divided into two color-clftoses, yellow and buff, which are synonymous with the terms jonque and iiufiy I but inasmuch as these terms do not express the »«aJ color they must be garded as purely tectra*aaH wo speak of a yellow-green or a yellow-cinnamon or a buff-cinnamon, when it is patent neither of these colors can be yellow or buff iu reality, and the words, therefore, taken in their general application, are technicalities. The explanation is simple. Whatever bo tho body-color of a canary, whether it be literally yellow or green or cinnamon, or whether it be in a lizard, or even a dark self-colored canary hybrid, it has two forms iu which it manifests itself. One is bright and, for want of a better word, wc will say luminous, polished aud glittering; the other dull aud fiat, and is by. com parison what frosted silver or dead gold is to the burnished metaL The first is the yellow form and the other the buff; and one or the other presents itself in every canary or canary hybrid. In speaking of tho Norwich canary tho terms jonque and mealy arc generally adopted, aud are both expressive j of the general character indicated. Tho ! word jonque is originmiy pure French, aud may bo taken to signify jonquil colored. I which speaks for itself. Mealy requires no i comment. PATENTS !
