AGRICULTURAL, AC. Progressive Farming. It is wi,th farming precisely as with, every other business; it must bo attended to or it will not pay. This is moro so now than for merly. For now machinery does the work of hand-labor; and science is adding success, winch the common farmer cannot reach?hence he is found in the rear of profits and general success. There must be intelligence. The advancement of farming has made this so.? "Skinning" land is getting to be among the things that were. This, howovcr, is less the ease on the prairies than in the east. An old fashioned farmer stands but a poor chance there. Ho is constantly selling out, to "better his condition," which is not done by buying another farm. He is generally glad to get rid of his, and not get him another "incuinbrance." We must then, as the country improves, im prove w?fh it?and that by informing ourselves, both by reading and conversation with those who know.?Rural World. Hen Signs. Some one has given the following signs for distinguishing hons that either will not lay at ?11 or only a few eggs in the spring, and take vacation for tho remainder of tho year. Hens that lay arc off the roost at the first dawn of the morning, while barren hens often remain there until the Bun is high in tho sky, or until the laying hons have ample time to fill their crops. Laying hcnB have a voracious appetite, while barren hens arc often very in different about eating. Hens that are about to commenco laying, or that do lay every day or every alternate day, are as active in obtain ing feed for themselves as one having a brood of hungry chickens is diligont in scratching out necessary feed for her young ones. A hen that lays an egg to-day and anothor to-morrow, has a comb and gills red and glow ing, while the comb and gills of a barren hen will be colorless, pallid "and sometimes wrinkled and dried up. When a hen that lays has eaten until her crop appears distended to its utmost eapaoity, she will force down a little more, while a barren one will often appear as indifferent about eating good feed. A hen that has laid an egg to-day and will lay another to-morrow will go singing around the yard, while tho hen that never lays has no more musing in her soul than tho wife of Socrates. Domestic Recipes. ,, A Good Puddino.?One pound of flour, two pounds of plums, oight eggs, two ounces of candied peel, almonds and mixed spice ac cording to taste. Boil gently seven hours. Sausage.?To every twelve pounds of meat take three tablespoons of salt not much heaped, three tablespoons of black pepper, eight table spoons of sage and a teaspoon of red pepper. Lemon Preserves.?Take one pound of loaf sugar, six eggs (leaving out two whites,) the juice of three lemons, tho rind of two, grated, and a quarter of a pound of butter. Put these ingredients into a saucepan, and boil gently over a slow fire until they become thick, and look like honey. It will keep good for twolve months. Castle Puddino.?Beat a quartor of a pouud of sugar and a quartor of a pound of butter ten minutes together; two eggs well beaten; then add them to the butter and su gar. Beat the whole twenty minutes. Then add, by degrees, a quarter of a pound of dried flour. After the flour, beat tho whole half an hour. Bake in small tins in a moderate oven, and serve up with brandy sauco. Sponge Cake.?Pour half a cupful of cold water over three quarters of a pound of lump sugar. Let it dissolve, and thon boil it.? Break seven eggs, leaving out three of the whites. Be partioulnr not to break the yolks. Then pour tho boiling sugar ovor, and beat eleven minutes. Stir in half a pound of flour and two or three drops of cBsonce of lemon. Do not beat after adding tho flour. Bake one hour in a slow oven. A Plum Puddino.?Threo quarters of a pound of raisins, stoned, three quarters of a pound of suot, chopped fine, thrcc-quartors of a pouud of bread crums, half a pound of brown sugar, one pound of currants, throo tablcspoon fuls of flour, six eggs, lemon peel, cut fine, nut megs, ginger, allspice, a little salt, and a glass of brandy. If it is too dry, add a littlo milk. It must bo thick and well ? mixed. Orange citron, and a few sweet almonds may bo added. Three hours will boil it. Supreme Nectar.?Put into a nine-gallon cask six pounds of moist sugar, five ounces of bruised ginger, four ounces of cream of tartar, four lemons, eight ounces of yeast, and seven gallons of boiling water. Work two or three days. Strain, add brandy one pint, bung very cloeo, and in fourteen days bottle and wiro down. Robert Lee Puddino.?Bluuch six ounces of bitter almonds, and two of sweet, boil them twonty minutes in tho third of a pint of new milk, thon pound them to a paste; whon tho milk is nearly cold add four well-beaton eggs that aro fresh, half a gill of thick cream and two table-spoonsful wine, lub six ounces stale spouge-cako to crumbs, mix all these ingre dients well and bent for ten minute's, stirring in two ounces sifted loaf sugar, butter a mould, stick it around in Vandykes with largo raisins, pour iu. the mixture tio it over with writing paper well buttered, and steam it over Hist boil ing water for one hour and three quarters serve with rich sauce.
