Beat thoroughly a cup of sugar and three eggs, add a third of a cup of water and a cup of flour sifted with two teaspoonfuls o? baking powder. Add salt and a teaspoonful of vanilla. Bake in patty pans and when cool scoop out the center carefully and fill the cavities with peaches, pears or any desired fruit. Place a spoonful of whipped cream on each, garnish with a piece of fruit used for the fill ing, and serve. Or they may be rolled in boiled frosting and sprinkled with cocoanut. Cottage Cheese Salad.-Alix two cup fuls of cottage cheese with half a cup of walnut meats, a teaspoonful of chopped chive:; or onion. Season high ly with salt and paprika, and arrange In balls, three in a nest of lettuce. Pour around them mayonnaise to which has been added some chopped olives or capers. Mock Clam Soup.-Wash free from salt a half pound of salt codfish, cover with a quart of cold water, and bring to the boiling' point and simmer for one-half hour. Remove the fish, which may bo saved for balls and strain the ""water, add a thickening of a table spoonful of butter whioh has been cooked with a tablespoonful of flour. Add a pint of milk and bring to the boiling point Into the soup dish place a piece of buttered toast, pour in the soup aad garnish with finely-cut parsley. Graham Bread.-Mix two cupfuls of scalded milk, one-third of a cup of mo lasses, two teaspoonfuls of sait, and w?en luke wann a fourth of a yeast cake dissolved In warm water, and two cupfuls of flour, four cupfuls of graham. B*gg well, let rise until double Its bu?k, b?at again, place in buttered pans and when well risen, bake in a moderate oven. Prune Pudding.-Make a small mold of lemon jelly. Here ls a recipe rather unusual: Indian Doughnuts.-Pour a cup of boiling milk over a cup of white corn meal, two tablespoonfuls_of butter and half a teaspoonful of salt. When cool add one and a h?lf cups of sugar, two beaten eggs, one teaspoonful of all spice and two cups of flour sifted with three teaspoonfuls of baking powder. Handle as soft as^fcossible. Cut and fry in deep fat If the dough ls well chilled before rolling the cakes may be handled much softer. Marshmallow Grape Juice.-Add th? Juice, of a lomon to a?QHart of grape juice and sweeten as' desired. Boll wkh a stick of cinnamon and a few cloves. Serve hoMn glosses with two marshmallows in each glass. As soon as well blended add a third of a cup of green grape Jefly. When melted, lay in a few slices of roost mutton, and when thoroughly hot add five tablespoonfuls of unsweetened grape Juice, end serve. Oysters Sauted-Pour a quart of bolling water over a pint of oysters, then drain and chop flue. Melt two ta blespoonfuls of butter, .urn in the oysters and season well; add two ta? blespoonfula of roiled crackers and three-fourths of a cup of cream, stir and cook five minutes.
