The expenne of preserving with sugar is a serious obj.etion. Free access of air causes the decomposition of vegetable matter. It is obvious that if Fruits and vagetables can be kept from contact woith air, this -effet .will not take place. To e ffeet this, the attention hs heretofore been directed to some iethodl of sealing the ean, while heat alone h-is be, n relied upon for drivinu out the air.
