Take a clear glass bottle, fill it with the lard to be tested, (leaving out the cork,) place this bottle about six inches from the stove or lire, and let tin; lard slowly melt, being very careful not to got it up to the boiling point, as the water would then evaporate; most of the water will slow.ly lull to the bottom of the bottle, i ll t the lard now melted will rise to tin* top. liy glaueiug at the amount ol water now deposited at the bottom ol the bottle, its compared with the amount ol oil (or bird) above il, you can easily tell bow much water there is in the fraudulent article.
