" How Err ? mi rho oi Coal?Building Fire.s. One of the most fruitful sources of household waste and extravagance la the coal bin. and tons of fuel are used where a single one would give the same results. Open drafts mid a range I full to the covers of glowing coals not 1 only burn a needless amount of coal, I but burn out the range at the same time. A shovelful of coal or sufficient to lightly cover the lire will accomplish as much as a half scuttleful, excepting in the increase of the coal man's trade. For a small range nut coal is beet; for a large one, small egg coaJ. Red ash coal makes a hotter fire, with fewer cinders, than the white ash, and the latter burns more slowly. For these reasons an equal mixture of the two is a wise economy. The ashes taken from the Are should never be thrown Into the can until they are Blfted. The cinders thus obtained can j be used on the fire at times when the greatest heat Is not needed. But they Bhould always be added after tne iresn coal Is well aglow. A third of a cupful of kerosene with which to saturate the kindling and coal before putting it In the range will facilitate the housemaid's morning work, whether or not the Are has been kept overnight Kerosene should never, however, be poured directly Into 1 a stove, either from the cup or can. The best way is to lay the wood' on ' a shovel and cover It there with the oil, and then add a sprinkling to a shovelful of coal. Many housekeepers Insure their kitchens against accident from this cause by leaving a part of a cupful of oil for the servant's use and locking the rest in the storeroom. A handful of sugar will revive ac expiring fire as quickly as will kero sene, but happy the housewife whose maid Is ignorant of the fact This accounts in many cases for the rapid dis appearance of the kitchen sugar sup piy- m How to Make Buckwheat Shc/rtcak* Take two cupfuls of nice soar milk (freshly churned buttermilk is the best), add half a level teaspoonful of soda (more if the milk is very sour) and a level teaspoouful of salt Add sufficient buckwheat flour to make a very stiff batter. Pour this into a buttered tin aud bake immediately foi about 30 minutes. Serve with butter i and maple sirup. How to Make Guinea Hen Pie. Bone the guinea hen and rub well with pounded mace, allspice and pepper and salt (use a teaspoonful of salt and half a teaspoouful of mixed spices). Then spread over a layer of foreemeat made by chopping two ounces of ham, one teaspoonful of^parsley and the peel of half a lemon. Wet the edges, put on a cover of the paste, brush over with egg and bake four hours. In the meantime make a good, strong gravj from the bones, pour It through a funnel into the hole at the top, and the pie la ready for use. How to Roast Clama. Wash and scrub the clams. Put them on the broiler and over a clear lire. As they begin to open take them from the broiler and remove the upper shell. Pour over a little melted butter and serve with a quarter of a lemon. Add a little chopped parsley to the melted butter. Serve the clams very hot Dow to Tell Arc of Iloraea. As soon as the set of teeth Is complete, however, a wrinkle begins to appear on the upper edge of the lower eyelid, and a new wrinkle la added each year, so that to got at the age of a horse over 8 yea's old you must figure the teeth plus the wrinkles. Then take them up and lay them on a gridiron over bright coals, then take the slice? on a hot dish, butter them freely, sprinkle pepper over and serve. How to Clean Cot Glut, Cut glassware Is both valuable and beautiful and should be carefully treated when cleaned. It should, In th? first place, be washed in warm water to which have been added a few drops of that Invaluable cleansing agent ammonia. Having thoroughly rinsed them, brush each piece separately with a soft brush dipped in whiting, and then, when the powder is washed off, polish the glasses, which should drain for a minute or two, with tissue paper, which puts on a splendid gloss. Hotv to Slew Carrots. Scrape some carrots and Don tiu nearly cooked, place lu a stewpan with one ounce of butter, a couple of small onions, minced flne; a little chopped parsley, with pepper and salt to taste. Simmer slowly for half an hour, then tdd some flour to thicken the gravy. Iqueeze over all a little lemon juic? and serve. How to Fry Eeli, After cleaning the eels well cut them in pieces two inches long. Wash them and wipe them dry.
