It is ever hungry, and cries for bread, beef, fish. One of New York's feeders is the ilip on the East River at the foot of Fulton street, just back of the wholesale fish market. It is here that the smacks and fishing vessels find their berths, and the fish they bring are at once disposed of in the market. For convenience sake, so that certain fish, such as cod, can be always had fresh, and even alive, each dealer in the market lias his quota of floating boxes in wl i?h fish can be kept. At certain seasons of the year the fish captured are placed in what arc called "wells" in the smacks themselves. The "wells" arc built into the smack9, and ?ea-water has free entrance into these wells. As the fisherman catches a cod, if the fish is not hurt by the hook, he tosses it into the well, and the cod thus imprisoned can be brought in good condition to New York alive. This is, however, only possible in cool weather, for though sea currents are cold, the slip in New York contains a warmer water, and fish die. The presence of small floating icc ' Jn the water also kills the cod. At ( such times, during tho summer, when cod could not be kept alive in the boxes, turtle take their places. Steamers coming with green turtle from the Florida coast and the West Indies often will bring more turtle than the market can use,and the surplus is 2>ut away iu these ( boxes. k In the slip may be seen the trimmest craft to be found in any fishing service. 1 A good smack must not only have solidity, but must be fast. She must be able 1 to withstand the heaviest gales, and 1 when loaded, to be quick in reaching a ' market. As she carries perishable goods, the sooner she gets rid of her cargo the f better it is for her. Sometimes a few hours' diflcrcuce as to time may increase the profit of the boat 25 per cent.,some- ? times 50 per cent. Fishing smacks never stay long in port To unload takes j but a short time, and the catch being < placed in the hands of the fish dealers, away she goes to set her trawls or handlines again. It is not New York alone ^ which consumes (lie fish brought to this fi dock. Cod, haddock, herring, blue fish, flounders, sheep's-head, every variety of fish, arc sent from here to the neighboring states. The products of ' the sea are exchanged for those caught in fresh waters. The railroads bring their quota of fish ^ from all parts of the United States to j AAnfvA r\P /I nm>1 r? el U'hiph is ^ iUU Ul CiU VVUUU V/i vi\.muu?, M -V- ? , C Hew York, and there may bs seen at | times, side by siilc on the same stall, the salmon of both the Atlantic and Pacific coasts; and though between the } Columbia river and the Penobscot thero may be many thousands of miles, if the 0 life history of the Salmo salar and S. = quinnat were known, both fish might have been caught on t^c same day, with- ^ out any disparagement as to their fresh- 8 ness. When the market ? a brisk one, ^ this dock presents a very lively aspect. 1 The fish are put in baskets and carried 0 rapidly into the market. All is bustle ? and confusion. The fishermen who the 1 day before have been setting their ' trawls off Sandy Hook, end have been 8 doing their best to arrive in good time c at New York, have now no cessation of = labor. The quicker they discharge the r better. Decks usually kept clean be- 11 come dirty and slimy. But now the last [ of the fish are disposed of, and it is 1 work again to tidy up things. The stores ^ are all ready for another trip, and now * thi> smart orets out of the ruck, slins 1 i:.to the stream, and sails away through the Narrows or up the Sound, intent oa 1 catching another load of fish, or "fare," 1 , as it is called. And so an unending ( series of fish arc being landed at this 1 same dock in New York, and hungry 1 Immunity still craves for more and more. ?[Harper's Weekly. Ghee is prepared by boiling fresh drawn milk in earthen pots for an hour or more and a iding, after it has cooled, n little curdled milk, says the St. James Gazette. The curdled mass is then ci:urned for half an hour, some hot water is added, and the churning continued for half an hour longer, when the butter forms. Tins butter is then boiled until all the watery particles and curds have t>cen thrown off by repeated skimmings. T.ie clear oil is poured into a vessel to cool, and the granulated mas9 thus | formed is ghee. It is kept in earthen pots and sold at banyas' shops at the rate of two pounds to three pounds for a rupee. If well made, ghee will keep good for years, losing its flavor some- j whnf hut not ils nroiierties which im- I prove wilh age. In some o!d families you will find ghee over 100 years old, buried under the earth in earthen jars. Instances are known of the preservation of ghee without taint, for 200 years, and even longer. Ghee is an articic of great commercial importance in many parts of India, being exported to all the sea coasts of eastern and southern Asia to the extent of 400 to 500 tons annually. Accoidng to the statistical authorities, 1,236,433 pounds of ghee were exported from India in the year 1879-80. All but the poorest classes in India, whether Hindoo or Mohammedans, use ghee for ordinary cooking purposes. Where the English cook uses butter, suet or lard, the Indian uses ghee. In frying potatoes, in cooking dai, in cooking sweetmeats, in preparing tasteful dishes, the upper and middle classes always use ghee, which is also rubbed over chupatics, the flat flour cakes serving for broad, r.nd poured over ric2 at it-. ** - * _ _ i.; r\_. . _ r jL. mc lime 01 caunj. uuc in iuu of the fine flavor of India made curries is the use of good ghee. Atul neither Hindoos nor Mohammedans will touch my food that is cooked with ghee which they believe to be adulterated with p'g's ar cow's fat. Ghee is believed by the Hindoos to be the purest eatable thing under the sun. rhe widow, who is forbidden to partake >f all luxurious food, is allowed to take jhec with her simple bread of rice. A Curious j Creature. Count Joachim Pfeii, the German African explorer, who has left Germany j .) governor-general of Somali country, fives th : following account of a myserious crcature seen oa the coast of the Jlanga district: "Wc often saw an inimal in the water which we first be ieved to be a serpent from its movenents, and from the fact that only now md then it appeared on the surface for i few seconds. Once, when we shot at j t, we were surprised to see it rise out of j he water and fly away. Afterward we ucceededin obtuining one of the curious ireatures. It was the size of a large janie duck, with black plumage and a netallic lustre. On its wings we noticed i few very light yellow feathers. Every here and there in the Cily of j Mexico may be seen a man standing on j the curbstone holding out his finger, on which perches a dainty bird, with never an attempt to spread its wings tind fly away, although its little, beady, bright eyes arc full of terror at the roar of the street. It is in like condition to the jumping frog of Calaveras, the vender having taken the precaution to fill up its gullet with shot before sallyiug forth to find an unposted purchaser.
