I pretend to nothing new in | what I will write, but there arc many 0 of us who ruav profitably learn what jJ1 is aid. This wine (I send you a sample.) was made as follows:?The grapes '"|(Scuppcrnpng,) were gathered alter j some two or three weeks of dry ! weather; sheets were held at corners ?i beneath the vines, into which the] i,' grapes were shaken, together with a good many leaves, twigs, and trash ihc last wcro separated from ihc CJ grapes by pouring them slowly out rjenan inclined plain ; tho green and 1 d :cayed ones were picked out. I have inado wino without sugar, that went through safe without acetous fermentation ; but it was poor wine, and as long as it continues to rain in Summer lime, here we will be compelled to add j sugar to get a wine with good body. FERMENTATION. This began in about twenty-iour hours and continued, rapidly, at first ' I boiling over and throwing o/T impurij ties for several days.
