Agricultural The Housewife's Work at Hog-Killing Time. The Progressive Farmer. What splendid hams, shoulders, sides, and jowls have been made ready for the smoke h< u e by the men on the farm and what tubs of bones, trimmings, tat, heads and feel are waiting for at tentiou Irom the Housewife, lor i we are tn the midst of liog-kill-j ing! With what enthusiasm | the housewife attacks the una'-j tractive rrass, for she knows of the potentialities which lie within. Pounds and pounds of sausage, pounds and pounds of lard, dozens ot cakes of soap, moulds of souse, and bowls of jelly, quarts of crackling*, scrapple, and excellent oil lie stored among these and it is lor her the task ot transmutation. I am speaking now of a moderate killing, not one on a large scale ; say a killing of l'rom six to eight hogs. When the killing is on an extensive scale the management is different, a9 I know by experience. Lot's roll up [our sleeves then, and set to work. % Trimmings should be divided into three piles, 1 lean, fat, and refuse fur soap. An excellent proportion for the lean and the fat in sausage is two-thirds loan, one-third fat, and weighing the meat is much more satibf tctory than guess-work. The following is an excellent recipe for sausage : To ten (10) pounds of ground meat put six (0) tablespoonfuls of powdered sage, two (2) tablespoonfuls black pepper, one (1) teagpoonful powdered cayenne pepper, three (3) tablespoonful * 8alt. Mix thoroughly. To make sausage successfully you will need a meat grinder and a stufTer. The Enterprise is an excellent meat grinder and number ten is the size well suit ed to the ordinary f tmily. Of the stuffer,or fiiler, as it is sometimes called, size number one is the one usu illy purchased. After siuffing the sausage, leave them ont of doors a tow days to dry. and then hang ihern in tho smoke house. The lard obtained bv squeezing the cracklings is best put to itself because it is never quite so white as that poured from the crackling* before squeezing. 'Tis true "a rose by any other name would sm 11 as sweet," but crackling-bread when passed around as "greasy-bread" and 'datty bread" los^s its charm for me. Crackling-bread is usually made too greasy, but when pro p< r!y made it i< cood and very satisfying.
