Ventilation in the Dairy—The im portance of a current of pure air through a milk-room where the milk is set for cream is not sufficiently under stood. It is supposed that if the apart ment is airy, dry and clean, and free from odors more or less offensive or even objectionable, these are sufficient. But they are not sufficient unless the term airy is understood In its fullest sense as including not only a large space but also a constantly moving and renewed body of fresh, pure air, that has not been deprived of its proper share of ox ygen by any previous process of con sumption. This is necessary for the following reasons: First, exposure to pure air prevents the formation of acid in milk. It is known that milk will sour very rapidly in the close atmos phere of a cellar in which the air has been deoxidized by means of decaying vegetable matter, or in which the posts or beams are affected by dry rot. Sec ondly, we know that this tirst souring is due to the change of the milk sugar into lact'o acid, a spontaneous change in which no alteration of the elements has occurred, and which requires noth ing more than the mere absence of oxy gen to affect it. This change will take place very quickly, as many milk dairymen find to their surprise and cost, when milk is canned tightly before it has been cooled and aired sufficiently. Thirdly, we know that this needed airing simply affects the oxidation of the milk requir ed to destroy the germs present in it, and by the operation of which the change of the milk sugar to milk acid is produced. Fourthly, it is known that exposure to air, and necessarily to oxy gen, which is the only active element in the air, develops a high flavor in the cream and in the butter made from it, and that cream so exposed to the air, or as we term it in common parlance, rip ened, churns more easily than other cream,and produces the very best qual ity of butter as regards color aud llavor. The fact is, the flavor of butter, and of cheese ns well, is developed only by a process of oxidation, airipg or ripening, for ail these terms mean the same thing, and if the dairy or chee?e-room Is not well ventilated and provided with abun dance of fresh, pure, moviug air, good butter or cheese cuu not be made. Pennsylvania Cat Fish Chowder,— After four pounds of fish have been skinned and drawn, wash them in cold water, put them into a kettle half full of salted boiling water, aud boil them gently until the flakes begin to separ ate; then take them up and remove the bones; put the flaked fish Into a sauce pan with enough milk to cover them, aud keep them hot. In auother sauce pan pat two t a Lie spoonfuls of butter aud four onions peeled aud sliced, aud fry them together; meautime peel aud slice hall a dozeu tomatoes aud fry them with the onions, and soak a pound of split Boston crackers in a quart of milk; when the onions and tomatoes have fried about ten minutes, take nearly all of them from the saucepan in which they were fried, and put in the fish and crackers, in layers, with the onions ana tomatoes; seasoning each layer with salt and pepper; then add four table- spoonfuls of Worcestershire, or any good table sauce; put in enough milk to cover the chowder about two inches, and simmer it gently for about ten min utes; then serve it hot. Lemons cut in quarters are usually served with cat fish chowder. What Kills Fruit Trees.—Deep pluming is oue error—to plant a tree rather shallower than it formerly stood is really the right way. whilst mauy plaut a tree as they would a post. Roots are of two kinds— the youug aud lender rootlets; composed entirely of cells, the feeders of the trees, always fonud uear the surface getting air audmoisture;aud roots of over oue year old, which soive only as supporters of the tree aud con ductors ot its food. Bence the injury that ensues when tlte delicate rootlets are so deeply buried in the earth. Plac ing fresh or green manure iu contact with the young roots is another great error. The place to put manure is ou the surface, where the elements disinte grate, dissolve and carry it downward. .Numerous forms of fungi are geuerated aud reproduced by the application of such manures directly to the roots, md they immediately at lack the tree. It is very well to enrich the soilat transplan- tiug tlm tree, but the manure, it to be iu coutact with cr very near the roots, should be thoroughly decomposed. A once famous Parisian florist uamed Bocbeher, having procured some rare auemoues from the East, would not part with a root either for love or mon ey. For ten years lie contrived to keep the treasures to himself, uutil a wily Benator paid him a visit, aud, walkiug round the garden, observed that the cherished auemoues were in seed. Let- Uucle Sam’s Navy. In a communication published iu the Army and Navy Journal, Commander J. B. Coghlao.U. 8. N.,states that the con sultations of eminent naval and other sur geons, respecting his rheumatic attack, failed to afford him the slightest relief. By advice of Dr. Boyle he used St. Jacob’s Oil, which wrought a complete and, as he says, wonderful cure. John Carr Moody, Esq., lawyer at Val'ejo, Cal., was likewise cured of a severe joint trouble. New Orleans Gumbo.—Pluck .and siuge a lafge fowl or a young turkey; wipe it all over with a wet towel, cut off the head aud feet, draw it carefully, aud cut it in joints as for fricassee. Peel aud slice a medium-sized onion, put it over the lire iu the soup-kettle with half a cupful of lard, aud let it begin to brown; then put in the chick- eu, and a piece of soup beef weighiug about three pouuds; when the chicken is brown, add four quarts of cold water aud a tablespoouful of salt, aud boil the chicken aud buef very gently until (ho chicken is tender. When the chick en is tender, take out the piece of beef, aud reserve it for other dishes; while the chicken is boiling, strain the liquor from a hundred oysters, aud remove all bits of shell from the oysters; after the soup has been takeu from the gumbo, put in the oysters and their liquor, sea son the gumbo palatably, let it boil ouce, aud then draw it to the side of the lire. As soon as possible, serve it; aud just before pouring it into the tu reen stir into it two tablespoonfuls of gumbo Jilt t, which is a tiue powder made from the young leaves aud shoots of sassafras dried. Corncobs clipped in coal tar or in turpentine and kerosene seemed to drive away a large proportion of the beetles. The way to grow horseradish is from the htlle roots four or live inches in length. These will produce good radish fit lor use in one season’s growth. Plant the root small end down and so that the top will be two inches under the soil. The depredatious of insects ou farm ers’ crops are compelliug farmers to learn a good deal of entomology. It is much less common than it was a few years ago to kill a worm or bug merely because it locked ugly. Some of our best msect friends are neither pretty iu looks uor in disposition. It is in the fall that their predatory character ben efits us, for their energies are then de voted to destroying our worst cuemies. The best time to stock a fish pond is iu summer, but any time will do when the ground can be worked, if it ia in tended lor trout, it is best to have it stocked by August, in order that the fish may become accustomed to their new home before spawning in the fail. Fish should not be moved to distant ponds about the spawning time,as they are apt te be injured or rendered perma nently barren, Apple Bught.—The lire blight—so called—of apple trees,is a disease which kills the small twigs and leaves and cause the trees to appear as if scorched. The only thing that can be done is to prune the trees closely, cut off all the dead wood, and burn it. Then give the trees a liberal dressing of lime or wood ashes. PlO'Uqhinq with Cows.—An ex-Judge In Ohio county, being short of work stock, hitched his milch cows and heif ers to the plough. The ex Judge now says that as evidei ee of his success he has left over in his cribs 600 bushels of as fine corn as he ever raised.
