There is no difficulty In this, if gardeners ate instructed to go steadily on with their plantings through the season; but few will do it on Weir own account, as it adds to their labor. The way, however, to raise the Unest quality of peas is,alter tne hrsttowings, to pirut them deep and mulch them, so that the soil they root in is always cool and moist. In the careless manner m winch peas are olteu cultivated that they have very little flavor and delicacy. It is so with raising what is called the snap-short beans. They are seldom planted deep enough, and as a conse quence have no more flavor than a piece of india-rubber, and about as tough. £nt the beans planted in Sep tember, ami in due time are lor sale in our market!, are really delicious in fla vor ana fairly men in their mouth. This is the result of cooi son. Crab-apple trees seem to wear well under all cneumstaijces, yielding heavy crops and sound nu.t. h er pre serving tney are excellent, us they pos sess peculiar acid properties and llavors unknown in other apples, and when luiiy ripe are relished oy some in pre ference to the improved Varieties. Scalloped Clah*.—Scald the dams, drain off the liquor and chop them up very fine. Butter the cavities of a number of largo clara shells, or, if pre ferred, a number of individual vegeta ble disbes. Tut in a thin layer of gra ted bread crumbs or cracker dust (the bread crumbs are to be preferred), then a layer of the chopped clams, a few small pieces of butter, a sprinkle of chopped parsley and a dust of black pepper; then a layer of bread crumbs and another of clams, etc., and so on alternate by until you have the desired quantity, the last layer being bread crumbs, upon which lay two or three pieces of butter, and pour in a small portion of rich cream or a little sherry, or a little of tbe strained liquor from the scalded dams. This liquor is, how ever, often very salty, therefore care must be exercised in the use of it. Bet your scallops iu a baking pan and cook in a moderate oven for fifteen or twenty minutes, or nntil the tops are of a deli cate yellow color. Serve very hot. The Flow.—It will be found that a two-Lorse sic* 1 plow that cuts a width of twice the distance of a one-horse plow, breaking three acres a day to the one acre of tbe one-horse plow, saves the farmer the labor of two men eaeli day the plow is ar work. A good culti vator, that plows from seven to eight acres a day, does the work of two sin gle plows, and saves the labor ^.f one hanu every day it is in use. The econ omy and perfection of the mower,reaper ana horse-rake are too well known to require comment. Bbeedino Geese. —In breeding geese the goslings may be killed ill' every year ana none saved for the next year but the old ones, except it be one 01 two of the best goslings, to take the place of such as are killed or hurt by accident. Geese lay regularly, breed and rear their young lor filty or sixty years. Bo if oue lias a good breeding goose, it is best to keep her for years. Ganders become so cross iu a tew years as to be unbearable, and when such is the case they are fit candidates for the spit. A faiimeii who is largely engaged in raiding stock adopts the following method in raising calves, and meets with excellent succi ss: The calves are tethered and allowed five quarts ol skim mii& morning and night. In the winter they received one quait each of wheat ana bran, and when they have finished that they are allowed a small quantity of hay. Toilet Boat.—Drippings which ac cumulate iu almost every household, cau be used for the grease. They should first be boiled iu water, and tbeu left to cool; afterward they should be removed from the water and boiled alone until tbe water is expelled. The whiter tbe grease can be made tbe better the soap will be. Tbe ingredients of tbe soap are six pounds of sal soda, seven pounds of grease, three pounds of un slackened lime, four gallons of soft water, and one-half pound of borax. Boil the soda and lime in the water until they are dissolved; let the mixture stand over night to settle; pour off the clear lye, to which add the grease and pulverized borax, and boil to the con sistency of honey. Take the mixture iroru the stove, stir in oue ounce of sas safras or lavenuer, and pour it into a tub, or what is still better, a tight, shallow box, to cool, and when cold, cut into bars and put on boards to dry. Tomato Pancakes.—Slice four large tomatoes of firm substance; they may be peeled or used with the skin on, but the potatoes must be firm and the slices cut perfectly even and about half an inch thick. Make a frying batter as follows: Sift together a cupful of flour and one teaspooutul each of sugar, suit and baking powder; have rea ly a fry ing-kettle nab full of fat. set oyer the tire, and when the fat begins to grow hot beat two eggs quickly, mix them with a pint of milk, and then stir in the flour; worn as fast as poi sit 1 >, so that the batter may be used while it is light with the gas which is generated wiien the baking powder is wet; season the slices of tomato with salt and pepper, dip them into the batter and drop them into the fat when it begins to smoke; try them golden-brown, then take them from the tat with a skimmer, lay them tor a moment on hrown paper to free 'hem trom the grease, and serve them hot. Mix your corn dough very dry and crumbly, and let the little ichows have plenty of fresh water to Unuk after eating,ana they wifi not drink too much; but if their mess is mixed thin and sloppy, they will befor- oed to fill themselves with too much water to get at their feed. “What is woith doing is worth doing well.” This old proverb will nowhere apply with more force than in the rais ing of poultry. Without constant care and attention in this,success is not to be expected. Borne kinds of business may be occasionally slighted without serious harm, but the least inattention in this occupation may cause a mishap that will blast the hopes of a whole season. It is worth the experiment of training » tew vines of the sw’jet potato to climb on short poles. A recent writer states that with a few rows so treated be work ed them with greater convenience. They did not form side roots, and the yield was much larger than from those grown m the usual way. A writer in an exebange snys that as the country grows older and more densely populated, and the people poor er we shall have less grain and more vegetables for food, less pork and more mutton. Give us the mutton. It is stated, and with good claims, that sunflowers will absorb malaria and render marsbly tracts healthful. Oue point cannot be aisputed. the seeds form a good audition to the winter feed of chickens, ow’ing doubtless to tbe oil they contain. It takes fr< m 28 to 30 days to hatch duck's eggs; 27 to 29 days for peafowls; 27 to 30 days for geese, and 27 to 29 days for turkeys. Curds and Whey.—Heat new milk to a temperature ol 98 degrees F. by plac ing il over the fire in a saucepan set in a pun of hot water Wiien the milk is wurm take it from the fire, put it into un earthen dish, and mix with one table- spoi nlul of leunet wine; stir the milk slowly until it begins to grow thick; (hen let it stand undisturbed for about twenty minutes, or until the curd sep- arab s from the whey; then gently pour the conUn s of the oisb into a shallow sieve set over a bowl, without breaking the curd, if possible, and let the whey drain off ; wnen the curd is drained slip it from the sieve into a gloss or china di»h, and serve it with cream, A piut of creuin is allowed for the curd from a quart ol milk. Powdered sugar is used t j suit the palate. To Preserve Strawberries Whole. — Take equal weights of the largest strawbirnes procurable and fine lo»f tugnr; lay the fruit in deep dishes and sprinkle half the sugar over them in tine powder; give tne dish a gentle shake th,.t the sugar may always touch the under part of tne fruit; on the next day make a sirup with the remainder of the sugar and the juice drawn from the strawnenies and boil it until it jellies; then caretully put in the strawberries and let them simmer nearly an hour; next put them with care into jsrs or bottles, and fill up with the sirup, of which there will be more than required, but on the next day the jars will holu nearly or quite the whole: covtr the jars or bottles with brandy papers. Bacon Banpwiches.—Obtain from any grocer what they call “parings,” which are really the outer slices of bacon, and, though equally as good as the remainder, are often of a darker color. For this reason these are often sold at sixpence a pound. Place them between very thin layers of bread, and, having previously prepared a thin bat ter of oue egg to a gilt e>f milk, iuun res the sandwiches into the mixture; ik n place them into a pan of boiling lard, fat or dripping ana fry to a rich golden- brown. wnen the bacon will be suffici n - ly cooked. These, if trimmed nicely and served on a napkin, much resemble a thin pancake. The iruit put up in tin cans should be taken out when the can is opened for use. If allowed to reman after the can is opened the action of acid juices upon the tin when exposed to the air may form acetate of tin, which is pois onous. Pour the fruit out into glass or earthenware dishes, and tbe danger of poisoning is avoided. Paper macbe may be mode to imitate the rarest marbles, as it takes a polish superior even to slate, and costs not even so much as the preparation of plas ter of Parts, known as soagliola, w bile it is infinitely stronger. Iron rust may be removed from deli cate garments, upon w bicb you dare not try oxalic acid, by mixing tbe juice of a lemon with some salt; put this over the rusted spots, and then hold over the spout of a steaming tea-kettle. One of the most attractive descriptions of ornamental prodnets now results from the utilization of an otherwise useless and offensive article, namely, fish scales. By means of a simple pro cess the scales are cleansed and purified till the clear, horny substance or core of the same is obtained, and this may >e stamped into various ornamental shapes and dyed in all colors, for artis tic purposes. Large scales are the most advantageous, taken from fresh flsh;old scales cannot be used, as they lack elas ticity and dearness, The fresh scales are exposed for twenty-four hours to the action of pure salt water, for loosening and partially separating the outer layers of organic matter; they are then trans- :'erred to distilled water, being placed every two or three hours in clean water, and washed five or six times, which randero the scales soft and clear. Each scale is now oarefnlly rubbed with clean men rags, and subsequently passed through a press having a linen lining so as to remove the moisture entirely from the scales. As a final operation the scales are placed for one hour in alcohol and again rubbed and pressed, when they are dry and have a perfectly clear appearance, a mother-of-pearl-like hue, and great elasticity and durability. The scales are need in this prepared state, or they may be dyed with aniline and other colors, in the usual manner, to be stamped into various ornamental shapes. Walk More and Sleep soundly. Mk. Pictures at bight.—kt the recent Photographic Exhibition in London, there was exhibited a new form of lamp for taking portraits at night Every body knows what a wonderful light can be obtained by burning a few Inches of magnesium wire. In this lamp the same medium is employed, bat instead of being consumed in the ordinary way, it is burnt in un atmosphere of pure oxy gen.
