Every implement should be provided beforehand, that no time may be wasted in making purchases or repairs after the work should begin. We have known a hall day of plowing to be lost because the vblffletrees wsie sot at hand. Some farmers start out with their spring plowing without a single p km point in stock, and when one is needed.the team is titkon from the field and driven to the store. Such a loss ot time is a serious mat ter, and should be thoughtfully guarded against by ample provision of all such arti cles of the farm. It is a poor time to mend a harrow when it should be at work in the field. We do not favor that economy—if it may be so called—that relies upon the neighbors for many of the tools of the farm There are certain farm implements that may be owned In partnership, as a roller or reaper, but the constant borrowing of rakes, forks, etc., is not a wise and econ omical practice. Be provided with all these essential farm tools, and have them in good order, and at hand when the time arrives for using them. Now is the time to look to these mat ters, and make all needed preparations for the busy days that will soon be here. In the peace of winter prepare for the war of spring. Tub Kieffer pear is now being much discussed in the agricultural papers, and very opposite opinions are expressed con cerning it We have tasted the fruit, and find it anything but fine in quality; but perimps we did not have so id specimen!, xt is clauned to be blight proof, and that its high colored fruit sells at handsome prices. We hope it may prove a deeirable acquisition; Brunton’a early blackberry is mentioned as attracting considerable at tention. It is very early, and on that ac count will prove prfltable as a market ber ry. The early harvest blackberry may also be mentioned as a growing favorite. The champion quince is very showy, and of good quality tor cooking; the tree bears abundantly when quite young, if allowed to. The Jefferson grape is a red grape, of large size and pleasant flavor. The Vergennes grape is hardy and ripens much earlier than the Jefferson. It Is also a red grape. Thx composition of cow’s milk is affec ted by various circumstances; under ex treme conditions it may contain from 10 to 16 per cent, of dry matter. The milk is poorer when the quantity produced is large or the diet insufficient, and richer when those conditions are reversed, A cow is generally in full milk from the sec ond to the seventh wcckiiitcrca5vmg;a?t»r this period the milk gradually diminishes in quantity, but increases m richness. A separation of cream takes place in the ud der; the milk first drawn is poor in fat,the richness increasing as milking proceeds, the last drawn milk containing two or three limes as much fat as the first drawn. The milk of old cows is commonly poorer than that of young cows. The iollowing are the points desirable in a practical farmer's hog: Fine short nose, dished face, fine ears, good width between eyes, eyes not too prominent; a straight, broad back of unsform width from shoulders to ham, short legs and fine bone. He should stand well up on nis pins, fat at any age, and, if well reared, make a weight of 250 to 225 pounds at eleven months. Now, does not the fore going description of a model farm hog full describe the well bred Berkshire? I think all will agree that it does, and I am satis fied that it the reader will notice the char acter of ail the various breeds of swine he will find that the most popt lar ones are those which come nearest to the model of a farmer’s hog presented above. A New Jersey poultry breeder, aftcf trying the value ot skimmed milk and buttermilk as food for laying hens and hogs, came to the conclusion to dispense with the hogs and feed the milk to the fowls, as it keeps them in good laying condition in winter, and is as cheap as anything else that can be given them. He thinks poultry can be kept with great pro fit on dairy farms. Cvoumbkbs.—A Wisconsin gardener, on the strength of experience, commends to townspeople who want fresh cucumbers, the practice of growing them in a barrel partly sunk in the back yard, filled half full of manure, and the remainder with soil, seeds planted on the surface, and vines dropping over the sides. It is proposed to establish three creame ries in Ontario at Government expense, to give instruction in butler-makiug.Creamery butter sella from 8 to 10 cents per pound higher than ordinary butter. One enter prising young farmer in Ottawa went over to the States, took lessons in an American creamery,and now his butter sells 10 cents higher than that of his neighbors. Hence the desire* to make improvements general. Ohs half of the ca-e and labor required to eara $50 tiling some crop will produce that amount for the farmer if bestowed upon his flock of fowls. If you propose to him to persistingly neglect his best oow from one end of the year to the other he will set you down as a candidate for the lunatic asylum, yet a common sized flock of fowls, such as are kept at most farm steads, will yield as much value yearly, If profieriy treated, as a first rate cow. In a soil once fertile, bat exhausted by improvident Ullage, the loss ot fertility applies chiefly to the surface, and if we go Mow the distance that the roots of tne grain extended, we may generally find a subsoil rich in the elements that give vigor to the growth of plants. In the approved modes of agriculture, we seek to reach and bring up the subeoil by deep plowing. Farmers who have basement barns can feed calves through the Winter with profit providing the animals are heifers of good milking or batter breeds. If, on the other hand, they are to be butchered and not kept as cows, calves are worth the meet and with the least cost when from four to five weeks old. In shipping fruits and vegetables in cold Winter weather line the barrels and boxes with a oouple of thicknesses ot news or wrapping paper. So says a man who had twenty barrels so lined detained on track for over forty-eigbt hours, with the mer cury at zero. There was no fire in the car. The value of the ice crop » likely to increase, as its use is exieuuiug far beyond the increase of supply. Large quantities of ice are now brought to South ern a ties from Canada and Maine. Am Enolish recipe recommends the following: Put into a large basin 1 lb. of ivory black, 1 lb. of treacle, and £ lb. of aweet oiL Stir these ingredients up with a stack, and let it stand for twenty- four hours. Then add a 1 lb. of oil of vitriol, mix with threo times its weight of oold water. Stir well, and let it again stand for a few hours, then add a quart of sour beer or water. Pour it into a stone jar, which keep in a dry place. Before pouring some into the small bottle for daily use, thoroughly shake the contents of large jar for sev eral minutes. Some of the cheap “blackings” sold are very injurious to shoe leather as they crack and bum it. A boy with a top tried to spin it. II lettuces aud endive are used for it, let them be dried per fectly before being used. Shred -’the lettuce finely, and toss It lightly with Tairagon vinegar and salt. Place it on a dish that has been made as cool as possible with a dozen filleted anchovies rolled in parsley and a teaspoonful of capers. Just before serving, totw the salad lightly with a quarter of a pint of mayonnaise, garnish with boiled beet root cut into strips, and four hard-boil ed eggs cut into quarters. Crown the whole with stoned olives and serve. “Troubles often come from whence we least expect them.” Yet we may often prevent or counteract them by prompt and Intelligent action. Thousands of persons are constantly troubled with a combination of diseases. Diseased kidneys and costive bowels are their tormentors. Farm House Apple Pie.—Pare sour apples—greenings are best—and cut in very thin slices. Allow one cup of su gar and a quarter of a grated nutmeg mixed with it. Fill the pie-dish heap ing foil of the sliced apple, sprinkling the sugar between the layers. Wet the edges of the dish with oold water; lay on the cover and press down securely that no juice may escape. Bake three- quarters of an hour, or even leas, if the apples become tender, It is important that the apples should be well done, but not overdone. No pie in which the apples are stewed beforehand can com pare with this in flavor. There is hardly but is sometimes an adult person living troubled with kidney difficulty, which is the most prolific and dangerous cause of all disease. There is no sort ot need to have any form of kidney or urinary trouble if Hop Bitters is taken occasionally. Indian Meal Crullers.—Pour Ij teacups of boiling milk over two teacups of sifted Indian meal; stir it vigoroualy; when it is cool add two cups of wheat floor, one onp of bntter (or two-thirds of a oup If you do not care to have them rich), li cups of sugar, three eggs, two teaspooufuls of baking powder and a tablespoonful of nntmeg or cinnamon. Let this rise till very light If not st.ff enough to roll well, add equal quantities of meal and flour, roll out in a sheet about half an inch thick, and out in small diamond-shape cakes. Fry in very hot oil. On Thirty Day*’ Trial. B.—No risk is incurred, as thirty days’ trial is allowed. Bavarian Cream.—Soak one-half box gelatine in one-half enp of oold water 15 or 20 minutes. Boil one pint of milk. Beat volts of four eggs, add one-half oup of sugar and one-half salt-spoonful of salt Pour the boiling milk on the eggs, and when well mixed put it back in double boiler; cook about two min utes; add soaked gelatine; strain into a pan set in iee water; add one teaspoon ful of vanilla and one tablespoonful of wiue. Chill and whip one pint of cream. As the custard cools stir it well, and add the cream. When stiff enough to drop pour it into moulds which have been set in oold water, and set away to oool One pound of trseh eggs is worth al most as much for food as two pounds of beef. An egg contains every necessity for the development of the perfect animal; and yet eggs properly conked rarely I of doors, also stair-rods, use sapoiio; or' found on the tanner’s table. 1 —— —*— Watermelon Cake.—White part— one-third onp bntter, one onp sugar, one-half tenepoonfo] almond, one-quar ter cup of milk, one and one-quarter cups of flour, one-quarter teaspoonful soda, three-quarters teaspoonful cream tartar, whites of i eggs. Red part- one-third onp of batter, one oup red sugar, yolks of four eggs, one-quarter oup milk, two cups flour, two even tea spoonfuls baking powder, one enp raisins, seeded and quartered. Put the red cake in the centre of a round pan, the white around the edge. Minor Pies Without Meat.—Two eups of chopped apple, one oup of dried bread crumbs, rolled very fine; dry the liread in the oven until it is crisp with out being brown; one onp of raisins, one oup of vinegar, one onp of molasses, and one of brown sugar; spies to your taste. Put little lompe of batter in the piee iust before putting the top crust over. The apples are to be quartered, and the cores and all spots carefully cut out, but they are not to be peeled. A little jelly or jam is a good addition. Oranoe Creams.—Pore a Seville or ange exceedingly fine, mix with the juice of four large ones, a pint of water and eight ounces of sugar, put into a white lined saucepan, and stir in the well-beaten whitee of five eggs; keep srixriiig one wsj till it thickens, then strain through a piece of muslin, and stir till oold, when add the yolks of the eggs previously beaten. Stir over a slow fire till almost boiling., pour into a basin and stir till nearly oold, then pour into glasses. To olean metal plates, keyholes, etc., if brass, rotten*tone. A C-UP of the old block: Colonel Bill McCracken enjoys the reputation of pouring oat more whiskey for one drink than any other man in Austin, newly- elected members of the Legislature excepted. The Colonel was taking a drink at ths Gently Dreaming saloon, when the barkeeper remarked: “I say. He is in the other room playing billiards." Colonel McCracken looked into the billiard saloon and exclaimed: “Why, that’s ray son, Tom.
