"Now that the conser\ai?on
pledges have been made by tin1 women
of our State, it is imperative to
foilow with suggestion that may
prove helpful to the housewives in
their attempts to keep the pledge,
and still provide tempting and nourishing
menus for their families.
if we take from a child a cherished
toy we disturb the equilibrium of i'.s
happiness until it is restored by newer
or more attractive playthings. Men
and women are but children of a larger
growth, and we all know from
personal experience that unt'l the
necessity is urgent our husbands,
brothers and sons do not fancy giv
u|> inni 11 *' i wiM" nil, runs iUHI
roast. Those wiser than we, with a
world-wide vision of our own and our
Allies' needs, have prescribed a meatless
and wheatless day, each week.
Some of us know that in families,
not vitally connected, with the army
by the tie of brother, husband or
son, that there is some resentment
felt toward this disturbance of their
time honored menus. " 'Tis true, 'tis
pity; 'tis pity 'tis true," but nevertheless,
we must face the facts that
exist, not ideals, that should prevail.
It is with the hope then of assisting
the housewives in keeping the peace
of the family, that enclose some war
recipes which have been prepared to
meet this need by Mrs. Kate Brew
Vaughn. We have tested them, and
know they are tempting and nourishing.
Try them for yourselves, and
then if possible, get the co-operation
of your County demonstrator and
give demonstrations in the town and
country school houses.
Again may I ask the co-oneration
of the South Carolina women in serving
re fresh men ts at social functions,
large or small. !f we would use
fruit salads and crackers, with whatever
beverage we prefer, there would
be an immense saving of wheat and '
meats. We are accustomed to use
sandwiches, to a large extent at social
functions, and there is always
waste connected with sandwiches.
'Tis true the creackers are wheat, but
those left over are in perfect condition,
which is not the case in the
sandwiches.
I'rge too the winter garden. It is
moiv important now than it .as ;n
the Spring. Now is the time to plant
English peas for early use. Onions,
spinach, kale, mustard and radishes
can all be planted now to great advantage.
Don't let's leave the hack
yard empty, when we can sunnlv our I
tabh's from them now, as we did in
the Spring.
We must keep preaching; the j;osptd
of economy and thrift. Plant a
larjrc l>c<| of turnip rooted radishes
for your chickens for their wheatless
and meatless days. You will he surprised
at the eagerness with which
they devour them, and the jjood results
you will obtain. This su^jrestion
is for those who have not the
space for rye."

All male citizens between the ages
of 21 and 60 years are deemed Taxable
Polls, except those who are
mained or for other causes are incapable
of earning a support.
The law requires 50 per cent, penalty
added to taxes on property subject
to taxes and not returned for assessment
