of preparation is a fine way
to prepare a hot weather favorite.
Batter-Fried Chicken ' >
1 cup sifted all-purpose flour
x/i teaspoon salt
1 teaspoon baking powder ? ?
1 egg, slightly beaten
% cup milk
1 tablespoon salad oil
3 pound frying chicken, cut in 8
pieces ' ;
1 quart Mazola Oil, for frying.
Sift together first three ingredients.
Combine egg. milk and salad
oil. Add to dry ingredients and
mix only until smooth. . Dip [
chicken pieces into batter until
completely coated. Place on wire
cake rack over wax paper to drain
off excess batter. Heat salad oil
in heavy 3-quart ketfle to 375*F.
or until 1 inch square of bread
browns in 30 to 40 seconds. Carefully
place chicken into hot salad
oll? and fry until golden brown,???? about
4 minutes. Drain on paper
towels. Place browned chicken in
baking dish and bake in moderate
or until tender.
Note: Fowl is delicious cooked
in the following manner ? precook
fowl as for fricasse. Cool;
retffbve skin and dip pieces In
batter. Fry as above in deep hot
salad oil (375?F.) 3 to 4 minutes.
Drain on paper towels and seryP
