This is unquestionably the most
important industry of Maryland in ?
operation to-day, particularly when !

vegetable packing season commences in j

About 750.000 people in the State of ;

truckers, but they ruo the risk in early
planting and very often lose heavily.
With the canning industry their crops 1
could be planted after all dangers of i

Canning hou>e machinery is simply
composed, as it were, of scalding, ex- ?
haust and process kettles, scalding bas- j
ket, exhaust and process cages, (recep
tacles for eon tain ?; the fruit in the var |
ious stages as described) then a crane ;
for handling these cages, fire pots, sol I
dering tins, etc. For a factory of j
?,000 o-pounds cans per day it would
require about twelve hands, three men
and the balance women or children.

pounds ; labels are ?1 50 and ?1.75
per thousand, any brand with name of
picker The 3 pound can is mostly
used for putting up tomatoes, pump
kins, okra and tomatoes as succotash,
etc ; pound cans used for fruits, ber
ries, corn, peas. etc.
In packing tomatoes it is usual to fill
the can '.::> with the fiuit, but often
packers fill up two-thirds and the :
balance use a liquor ; the same wiih
corn. Fruits are without syrup.
Machinery can be utilized for fi'ling the ,
cans with tomatoes, corn, etc, but as a j
cenerai thing this is done by band. :
Machinery is also: used for silking and
removing the corn from the cob There
is. also a pea huiler and separator for \
canning pess. Tomatoes, as a general :
thing, pay better than any vegetable
packed, and this season they are bring
ing better pi ices than iu some (?me. :
Last season the pack was short, aud ;
prices will rapidly advance. Any kind
of vegetable will pay.
A ? eri can canned goods are now
largely exported and the foreign de- ?
m and is increasing every year. There
have been large shipments made recent
ly to South and Central America and
other foreign n:a:kets If the Souih
packed a sufficient quantity to supply ;
her own demand, it would require a
very large number of packers. If
some one of your farmers declared
his intention of going into the business,
he would even if ne did not raise the
?tuf? himself have all the stock he want- ;
in Maryland. From 20 to 3U cents per ?
bushel paid for tomatoes, and when ?
considering from 200 to GOO bushels ;
ire raised to an acre it pays well. Ouc
can raise his own stock One bushel
if tomatoes will pack eighteen three
pound cans
The most popular varieties for can- \
aing are the "Xew Queen " "Fara- :
yon" and "Acme.'" Let your farmers
ook into the matter. Put in a few
lores of vegetables and try the can
ling business. It will give employ- [
ment to your people and encourage

AN EGG WITH WINDOWS.

Through a Piece of Glass.
A French scientist who removed tlie
shell on either -.ide of an egg. without
injuring the membrane, in patches about
the M/.o of the diameter of a pea, and
snugly fitt il the openings with bits of
glass, gives the following report of the
wonderful experiment: 1 placed the egg
with he glass bull's eyes in an incubator,
run by clock work and revolving once
each hour, so that I had tin- pleasure of
looking through and watching the
change upon the inside at the cud of
each sixty minutes. No changes were
noticeable until after the end of tho
twelfth hour, when some of the linea
ments of the head and body*of the chick
made their appearance. The heart ap
eare?! ?> Im -at at the end co" the twenty
fourth hour, and in forty-tight hours
two vessels of blood were distinguished,
the pulsations being quite visible.
At the iil'iieth hour an auricle of the
heart appeared, much resembling a lace
t,r noose folded down upon itself. At
the end of seventy hours we distin
guished wings and two bubbles for tho
brain, one for a bill, and two others for
the forepart and hint-part of the head.
The liver appeared at the?*nd of the fifth
day. At the end of hours the first
voluntary motion was observed. At the
end of 1->S hours the lungs and stomach
had become visible, ami four hours later
the intestines, the loins, and the upper
mandible could be distinguished. Tie*
slimy matter of the brain began to tak*
form and become more compact at the
beginning of the seventh day.
At the tUOth hoar the bill iirst opened
and flesh began to appear on the breast.
At the llMlh the sternum appeared. At
the 210th hour the ribs had begun to put
out from the back: the bill was quite
visible, as was also the gall b? xlder. At
the beginning of the 23'Jth hour the bill
had become green, and it was evident
that the chick could have moved had it
been taken from the shell. Four hours
more and leathers had commenced to
shoot out and the skull to become gristly.
At the 'J?-bh hour the eyes appeared,
ami two hours later the ribs were per
fect. At the 33Ut hour the spleen drew
up to the stomach and tho lungs to the
chest. When the incubator had turned
the egg 35? times the bill was frequently
opening and closing, as if a chick were
gasping for breath. When -1?I hours
had elapsed we heard the ?irst cry of the
little imprisoned biped. From that time
forward Ite grew rapidly, and came out
a full-fledged chick at the proper time
