A CUP OF TEA.
The Way to Bring Out the Real Bouquet
of the Leaves.

tea several things are indispensable.
First, the water should be freshly
drawn. Never use water previously
boiled, for its life is gone.
Second, the teapot should be made
hot by dry heat if possible or else
with boiling water.
The best sort of teapot is that I
made of unglazed clay. The Japanese
make one of a dark red clay,
1 often procurable at the ten cent
stores. But the best are made by
the Chinese of a reddish brown clay
from the banks of the Souehien
river. It is famous for drawing Out
all the sweetness from the leaves.
There is no objection to a glaae out
side the pot. But the inside, when
unglaxed, seems to have some chem
icai action on the brewing of tea
which adds to its bouquet.
Third, the "time limit" makes or
mars your pot of tea. Do not let
the leaves lie aimlessly in the pot to
give out the flavor at their own
sweet will. But procure a deep
porcelain receiver or strainer full <
of holes, such as comes inside blue 1
and white Japanese teapots. Put 1
your tea leaves in the strainer and
be generous with them-rthey will ]
repay you tenfold with a rise in
spirits and general couleur de rose
feeling and set the strainer in the
pot. If it does not fit use yoilr fem- i
mine ingenuity and make a handle <
of cord. Never let metal come in ?
contact with tea in the making.

the tea is forced out before the tan- r
nic acid can mingle with it, and you
have gained in less than two min- 1
utes a bouquet obtainable in no oth
erwav.
Take any unmixed black tea. Try

80 cents a pound taste like $2, I
while most people only succeed in J
making 92 tea taste like 30 cents. (

the steamer in and climb up the
side when she slides up to the dock,
and they shove their woolly heads
over the railing to look for a generous
and curious tourist who will pay
for the exhibition they are willmg
to give at a moment's notice.

. A simple and economical substitute
for a night light may bepreoared
in the following way: Take
some good sized chestnuts of irregular
form, and with the aid of an ordinary
needle nddle them with fine
holes. Then soak them in oil for
twelve hours. To convert a chestnut
thus prepared into a night light1
you have but to bore a hole in it,
but not quite through it, and fill the
pace with cotton threads to form
a wick. Set it in s glass of water,!
on which it will float. If you light
it at night on retiring you may
- count on its lasting until morning.
The only precaution necessary to
take is to make sure that the chestnut
will maintain its upright position
in the water. It is therefore
well to choose one of irregular shape
and to make it float before placing
the wick, in order to determine the
exact point at which the latter
should be inserted, so that there
may be no danger of its touching
the water
