There are a variety of ways to prepare Maine sardines and a popular recipe is reprinted below. The little fish are rich in high-quality protein and, because they are packed in polyunsaturated oils, there seems to be no danger of increasing the cholesterol level in the blood stream. Try Sardine Recipe For Treat MAINE SARDINES RAVIGOTE -a hot entree- 1- 3 cup consomme or dry white wine 1/4 cup cider vinegar 1 small white onion, minced 1/4 cup butter or margarine 1/4 cup flour 2 cups milk 1/4 cup heavy cream 1 teaspoon minced chives salt and pepper to taste 3 cans (4 oz. ea.) M a i n e Sardines 1 package frozen peas cooked 1/2 cup grated Parmesan cheese sardines and place in casse role. Pour sauce over sardines. Garnish with peas and grated cheese. Place in hot oven (450 degrees F.) for 10 min utes until cheese is bubbly. Yield: 4 servings. GOD'S SHARE In France, a portion of the Epiphany cake is often set aside as "la part deDieu" — God’s share. It Ls given to the first poor person who comes to the door. CHRISTMAS CANDLES Combine consomme or wine, vinegar and onion. Sim mer until reduced to about 1/3 cup liquid. Make a cream sauce by melting butter or mar garine, stirring in flour and cooking until mixture bubbles. Add milk and stir untilmixture thickens. Stir hot cream sauce into hot wine mixture. Simmer gently for about 4-5 minutes. Whip heavy cream very slight ly to give it body and stir into sauce. Add chives. Season with salt and popper to taste. Drain Lighted candles in the win dow supposedly light the way for the coming of the Christ Child. Many people once be lieved that Christ appeared at Christmas, concealing his true identity. Instead of a manger scene under the tree or in a corner of a room, a whole room is filled with a replica of the Nativity, and people go from house to house admiring them. The Christ Child has for centuries been accepted as the giver of gifts, but recently San ta Claus has also made his in fluence felt here. It is not un common to see a mannequin in a department store window, equipped with a beard and the rest of the Santa Claus regalia. FEMALE HOLLY Most everyone knows that among bird families the most brilliantly colored is generally the male. But, did you know there is both a male holly tree and a female holly tree — and that only female hollies bear berries? You can distinquish between the two at blossom time in late May or early June. The female flower has a green protuberance in the center sur rounded by four white pistils. The male flower has four yellow stamens and does not have a center core of green. MIDNIGHT SHOPPER Many d e p a r t m e n t stores have a 24 hour shopping ser vice. If you’ve reached the point where you can’t figure out when you’re going to find time to finish your Christmas shopping, try doing it by tele phone in the middle of the night. GIFTS FROM OUR KITCHEN Look in your cupboards for Christmas giving ideas. A jar of homemade jam, jelly, mar- malads or homemade pickles is a welcome gift to many. Give a Christmas tree dec orated with cookies. Select a small tree. Another delightful gift is Christmas bread. Make it plain or as a Swedish tea ring or coffee cake. ' BE GRATEFUL For how many more Christ mases will the world be waiting for peace on earth to ALL men? This we do not know. We can though; be grateful for the true meaning of Christmas. Be grateful to mankind’s greatest gift, the birth of the Christ Child. Be grateful for His birthday, knowing that the spirit of good will on Christ mas becomes the motto of all men.
