BASIC BISCUITS 12 biscuits 2 cups sifted enriched self- rising flour* 54 cup shortening to % cup- milk Set out baking sheet. Preheat oven to 450°. Into medium-sized mixing bowl measure -flour. Cut In shortening until mixture re sembles coarse crumbs. Blend in Enough milk to make a soft dough. Onto lightly floured board or pastry cloth turn out dough and knead gently 30 seconds. Roll out %-inch thick. With a floured JV4-inch biscuit cutter or sharp'knife cut out biicuits. Place on baking sheet. Bake 10 to 12 minutes, or until lightly browned. ♦If you don’t sift and in the absence of other directions, spoon 'flour directly from container into a one-cup dry measure, level off, then remove two level tablespoonfuls, according to USDA {recommendations. Seven Seas Casserole 1*1/8 cups water 1/4 teaspoon salt 1 can (10-1/2 os.) Dash of pepper ' * r . condensed cream of , 1*1/8 cups Minute Rice , mushroom soup or . ' * condensed cream of celery soup 1/4 to 1/8 cup finely chopped 1 onion (optional) ti 1 teaspoon lemon juice v (optional) 1 package (10 oz.) frozen S een peas, partially awed (< optional) • 1 can (7-3/4 oz.) salmon^ drained and flaked 1/2 cup grated Cheddar cheese Paprika •Or use 1-1/2 cups drained cooked peas. Combine water, soup, onion, lemon juice, salt, and pepper In a saucepan. Bring to a boil over medium heat, stirring occasionally. Pour about half of the soup mixture into a greased 1-1/2-quart casserole. Then, in separate layers, add rice, peas, and salmon. Add remaining soup mixture. Sprinkle with cheese and paprika. Cover and bake at 376° for 10 minutes. Stir; then cover and continue baking 10 to 15 minutes longer. Makes about 6 cups r 4 servings.
