Snacks A-Plenty
A nice dip for evenings on the
porch uses 1 cup heavy cream,
whipped, 2 tablespoons horse
radish, % teaspoon minced onion
and 4 tablespoons deviled ham.
Children love these: peel ba
nanas, spear with . a wooden
skewer, dip in melted chocolate.
Place in freezing compartment
until chocolate is firm.
Roll shrimp or pineapple
wedges with whole, canned water
chestnuts in bacon, fastening with
a wooden pick. Broil until bacon
is crisp.
Sprinkle potato chips lightly
with garlic or onion salt, grated
cheese, lemon juice or parsley.
Place in heated oven for a few
minutes, then serve hot.
Make applesauce nut bread,
slice thinly, and spread with cream
cheese and chopped dates.
Pineapple chunks rolled in sof
tened cream cheese, then rolled
in finely chopped mint leaves ave
delicious by themselves or in
salad.
Helen’s Favorite:
Quick Frozen Preserves
16 ounce package frozen
strawberries or peaches
2 tablespoons powdered pectin
% cup sugar
Place frozen fruit in tightly
covered saucepan; cook over
high heat about 2 minutes.
Stir occasionally to break fruit.
Stir in pectin. Bring to a rapid
boil and boil 1 minute. Add
sugar and bring to a fall roll*
ing boil. Boil 1 minute while
stirring constantly. Pour mix*
ture into jelly glasses and chill
until it sets. Pour melted par
affin on top.

You’ve a treat in store when you prepare these zesty Corn Meal-
Onion Wafers. Their crunchy-crisp texture, which -so nicely accents
a luncheon salad, is sure to be a hit with all members of your family.
When you use enriched self-rising corn meal you save yourself
extra work, too. There’s absolutely no sifting at all for you to do,
and even measuring stops are kept to a minimum because the
leavening and salt have already been expertly blended in for you.
Serve snacks and menu accompaniments made from enriched
self-rising corn meal often. Such treats pay dividends not only in
flavor but in nutritional rewards, as well. Enriched self-rising corn
meal is rich with the goodness of the B-vitamins thiamine, niacin
and riboflavin and the minerals Iron and calcium.
CORN MEAL-ONION WAFERS
About 42 wafers
y 2 cup enriched self-rising,
corn meal
14 cup enriched self-rising
flour
Dash of cayenne pepper
i/ 3 cup finely chopped onions
3 tablespoons shortening
2 to 3 tablespoons cold water
Grease baking sheet. Preheat oven to 425o. In medium-sized mix
ing bowl combine corn meal, flour and cayenne pepper. Stir in
onions. Cut in shortening until pieces are size of small peas.
Sprinkle with water, a little at a time, mixing lightly until dough
begins to stick together. Onto lightly floured board or pastry cloth
turn out dough and press together. Roll out %-inch thick. With
floured 2-inch cookie cutter cut out rounds or other desired shapes.
Place on baking sheet. Bake 8 to 10 minutes, or until very lightly
browned.
Beef Stew With Dumplings
Seems all of us enjoy tasting “fancy” foods once in a while, and
certainly it’s fun for you homemakers to experiment .witlT new and
•unusual recipes. But for day-in, day-out eating, nothing beats old-
fashioned dishes.
When cool winds blow. Beef Stew with Dumplings, for instance.
Is almost as satisfying to the spirit as it is to the tummy. This
homey, fragrant main dish is.liked by almost everyone, and, even
when time, is short, "convenience” foods make it possible to have
stew and dumplings in almost no time.
Enriched self-rising flour in the dumplings makes their prepara
tion especially quick. Because the correct amounts of leavening
and salt are* already blended in, there are no extra measuring and
sifting steps. Just add milk to self-rising flour, stir and use to top
canned beef atew. If you prefer and‘time is no object, prepare your
favorite beef stew recipe and top with dumplings 20 minutes before
serving.
Hearty, long-simmered stews and other such 'dishes take so
nicely to dumplings or othe* hot bread toppings. There’s a nutri
tional addition, too — the special bonus of three B-vitamins thia
mine, niacin and riboflavin and the minerals Iron and calcium, in
herent in any baked product prepared from enriched self-rising flour.
BEEF STEW WITH DUMPLINGS
4 to 6 servings
2 cans (1 lb., 4 ox. each) V/z cups sifted enriched self
beef stew rising flour*
% to & cup milk
In heavy saucepan or Dutch oven heat atew until simmering.
Meanwhile, into medium-sized mixing bowl measure flour. Stir in
enough milk to make a stiff batter. Drop batter by rounded table
spoonfuls onto simmering stew. Simmer uncovered 10 minutes,
then cover tightly and simmer an additional 10 minutes. Serve
immediately.
*If you don’t sift and in the absence of other directions, spoon
flour dire.Uy from container into a one-cup dry measure, level
off, then remove two level tablespoonfuls, according to USDA
reeo" -mendations.
