Preparation Is
Important for
Perfect Turkey
Turkey and all the trimmings—
that|s what makes a Christmas
feast fit for a king.
The ‘ turkey, of course, is the
most important item so great
care and consideration must be
given to the selection and prepa
ration of this native American
fowl.
Age, sex, and tenderness of the
meat determine the market class
of the bird. The youngest turkeys,
by far the most popular with
American families today, weigh
from 4 to 6 pounds.
The next class, popular with
larger families weigh in from 6
to 25 pounds and is composed of
toms and hens over eight months
of age. These older toms tend
to be stronger in taste and for
that reason the hens are more
popular.
Top Birds
A top quality bird should have
a well - developed, moderately
broad breast, well fleshed through
its entire width and length. The
breastbone should not protrude.
Preparing your fowl is impor
tant also. Be sure that aH wingtip
feathers have been removed. Any
remaining ones can be pulled out
by pressing the skin around the
feathers down to the tips of the
quills with the forefinger and
thumb of one hand and pulling
the feathers straight out with the
other hand.
Helps Taste
By using a pair of pliers you
can remove many of the heavy
tendons of the legs. This greatly
improves the cooking and taste
of the drumsticks.
Stuff your turkey just before
putting it into the oven. Use three
skewers before closing the cavity.
Tie a square knot after each
skewer so the lacing won’t tight
en. This allows steam to escape
and prevents soggy dressing.
And last, but important, give
your turkey a chance to cool be
fore serving. It will carve much
oetter if you do.
Customs Associated
With New Year's Day
Centuries ago, the Vikings buih
huge fires at the turn of the yea;
to propitiate their fierce Nors;
gods. The ancient Romans woulc;
observe the start of a new season
by hanging masks of Bacchus
upon trees and vines, with the
hope that fertility would be im
parted in every direction to which
the masks were turned by the
wind.
The Scots switched the trunks
of fruit trees, in anticipation of 4
“howling good crop.”
No one knows for sure why we
moderns think it necessary to
make as much noise as we can
on New Year’s eve, unless, like
some of our ancestors, we be
lieve that evil influences will be
frightened away by all the noise
and shouting.

George Washington
Held Open House
Some historians say our first
President is responsible for the
“Open House” custom that is a
part of New Year observance in
this country. In the year 1790,
when the seat of the government
was in New York, George Wash
ington opened the doors of the
Presidential mansion to home and
foreign diplomats, as well as local
citizens.
“Open House” on New Year’s
day grew in popularity. At the
turn of the 20th Century, newspa
per columns carried “at home”
notices announcing the hours dur
ing which visitors would be re
ceived. The host and hostess
would receive guests duripg cer
tain hours and then close their I
receptions to join the procession
of callers at other “open houses.”
Selection of Proper
Toys Important
There is no hard and fast rule
by which one can tell the exact
toy for a certain age child, but
some toys are better than others
for children at different ages.
Also, the toys you select can turn
a happy holiday into a time of
needless tragedy if you do not
exercise caution in your selec
tion.
Sharp toys or poorly construct
ed toys are the ones that cause
the most accidents. Avoid them.
Generally children from infan
cy to two years like bright-col
ored, lightweight toys of vcrious
textures. They should be wash
able, too big to swallow, and free
from rough edges.
Toddlers from two to four years
want push and pull toys. Trucks
and cars big enough to straddle
and push, wagons, wheelbarrows,
small doll carriages, peg-boards
and peunding sets are also good
for this age group.
Tako your time in the selection
of toys for children of all ages
and it will make for a happier,
healthier and safer holiday.
