UDC Chapter Hears Interesting- Program At Monthly Meeting- The regular meeting of the Cal vin Crozier Chapter of the UDC was held at the home of Mrs. R. H. Wright on January 6. Mrs. J. L. Feagle was the associate host ess. In the absence of the chaplain, Mrs. R. H. Wright led in the open ing ritual, the pledge of allegiance to the United States’ flag and ih the salutes to the Confederate and State flags. Mrs. J. L. Feagle, the president, was in the chair and welcomed Mr5. J. F, Hawkins as a new Siember and Mrs. Stroth er Paysinger as a former member. The secretary, Mrs. Adrian Sum mer, read the November and De cember minutes which were ap proved. The assistant treasurer, Mjrs. W. O. Miller, reported $85.06 in the general fund and $419.78 In the scholarship fund. Mrs. W. W. Cromer urged the members to get in subscriptions to the UDC magazine. The secretary read a card from the UDC hostess at the Confeder ate Home thanking the chapter for the thirty-four Christmas pack ages which it had contributed to the ladies there. Mrs. F. Scott Elliott gave the program for the afternoon, using as her subject “The Mothers of Lee, Jackson and Maury.” The president thanked the speaker for her presentation of this subject. A delicious salad course was served to the seven teen members present. Ticklers FRIDAY, JANUARY 9, 1953 By George When you’re serving any of your favorite cuts of beef, try those large Spanish onions as an accompani ment. Bake them in cream or scoop out and fill with sauteed mush rooms for a really elegant vege table dish. Make a lovely dessert with me ringues put together with sweeten ed whipped cream when xpu’re having guests for dinner. Some frozen berries spooned over the top will add a glamorous touch of color. Dried herbs soaked in a bit of milk before you add them to ground meat for meat balls will season them delightfully. Soaking in milk helps them regain their flavor. Recipe of the Week Orange Raisip Pork Chops (Serves 4) 4 pork chops 1 to 2 oranges 2 tablespoons sugar 1 tablespoon comstarclj % teaspoon allspice 1% cups hot water 2 tablespoons lemon juice Ve cup orange juice Vi cup raisins Flour chops, brown and sprin kle with salL Remove orange rind with sharp knife; free orange sections from membrane and lay two sections on each chop. Make sauce as follows: mix together sugar, cornstarch and allspice. Gradually stir in hot water and cook until thick. Add lemon juice, orange juice and raisins. Pour sauce over chops and cook over low heat for an hour. Serve topped with sauce. Use your bits and ends of pie crust for turnovers for the chil dren’s snacks or lunches. Apricot marmalade mixed with cranberry sauce is a good filler and so is orange marmalade with cranberry jelly. Make your next gingerbread in two layer cake pans. When it’s baked and cooled, put the layers together with apple butter and top with swirls of whipped cream. Having neighbors in for an after noon cup of tea or coffee? Toast bread on one side, then butter un toasted side and spread with brown sugar and broiL Cut in strips to serve. ‘I don’t care if this new salesman used to be a bellhop. . . .
