I Black walnuts, next to pecans the most popular and plentiful of the native nuts of this country, need prompt gathering and hulling as son as they are ripe, according to the U. S. Department of Agriculture. | The whole crop matures about the ’ same time on the tree and should i then be gathered and hulled prompt- j ly. The green hull outside the shell turns black quickly and then stains shell and even the kernels within if j nuts are allowed to lie on the ground. Any farm family owning a . handpower corn sheller can use this ; for hulling, but rolling nuts under foot on the ground also removes hulls easily. After hulls )are off, dump nuts immediately into a tub of water and churn with a broom until clean. Then spread nuts on floor in a well- ventilated ^room or left to dry or cure before cracking. If layers are spread more than one nut deep, stir nuts frequently to let them dry with out molding. Black walnuts have a stronger flavor than other varieties of wal-! nuts so are used widely by confer-1 tioners and ice craem makers. Many a home cook favors them for cake, cookies ,candy and desserts because they hold their -flavor during cook ing. In recent years black walnut | kernels selling in waterproof bags have become popular for eating out of hand. This fall’s crop of 'black walnuts is not as large as last year’s except in certain southern states, notably . Arkansas, so such nuts as there are j deserve to be carefully conserved and not allowed to darken and spoil i on the tree or ground. Black walnut spice cake, baked either in layers or as cup cakes is : a favorite black walnut treat. ' In- I gredients: 1 cup black walnuts broken; 1-2 cup fat; 2 cups brown sugar; 3 eggs; 3 cups sifted flour: 1 tablespoon baking powder; 1-2 teaspoon each of salt, cinnamon, nutmeg, ground cloves; 3-4 cup milk. Place nuts in boiling water a few minutes and drain. Cream fat and sugar. Add well-beaten egg yolks. Sift together dry ingredients. Add dry ingredients alternately with milk to first mixture. Add nuts.Fold in well-beaaten eggwhites. Bake either in greased muffin tins or in 3 layer cake pans in a moder ate oven (350F.) for about 20 min utes, or until lightly browned.
