If you are interested in a steam
•pressure cooker you will be glad to
hear that there will be some avail
able this summer. Just how they
will b e allocated no one seems to
know but it might be a good thing
to contact your dealer and put your
name on his waiting*list. After you
have located the cooker you apply
for one just as you have been doing
about wire, etc. The number of
cookers will be limited, so delay
might be dangerous if you wish to
get one. The U. S. Department of
Agriculture has issued a release in
sisting that the use of the steam
pressure canner is the only method
it can reommend for the canning of
certain types of vegetables known as
“non-acid.” The non-acid foods in
clude such vegetables as beans, peas,
corn, spinach, other greens, and as
paragus, as well as meats. In acid
products such as fruits and tomatoes,
rhubarb, and pickled beets, on the
other hand, botulinum spores are
made harmless or destroyed by boil
ing temperatures and these foods
can be safely canned by the boiling
water-bath mehod. 4
Other methods recommended are
dehydrating, brining, pickling, and
freezing. Root crops, winter cab
bage, pumpkins, and winter squash
can be stored. Canning bulletins
are available at the office of the
Home Demonstration Agent. It is
the purpose of the agent to hold can
ning demonstrations in various local
ities. The public will be welcome at
any of these meetings—most of
w'hich will be held in June. Will be
glad for you to get a group together
and ask for canning demonstration.
This is our big job and we want to
do it right.
