Christmas Roast Beef *2 or 3-rib standing roast 1-2 cup raw cranberries Flour Salt and pepner. Wipe meat with a damp cloth. Sprinkle with salt, allowing 1-2 teaspoon for each pound, then lightly withTkmr. Place the roast in an open pan without adding any water and with the fat side up. As the fat melts and cooks out, it will baste the meat. Place the meat in a hot oven (500 degrees Fahren heit). Sear for twenty or thirty minutes until lightly browned. Re duce the temperature to about 356 degrees Fahrenheit, and continue cooking until the roast has reach ed the desired degree of doneness. Allow sixteen minutes to the pound to be rare, twenty-two minutes to the pound to be medium, and thirty minutes to the pound to be well done. Decorate attractively with raw cranberries stuck on with toothpicks. Garnish with parsley. Roast Pork Loin With Jellied Apples 1 pork loin , 8 apples 1 1-2 cups sugar 1 1-2 cups water Cranberry jelly / Flour j Salt and pepper Watercress Have a loin of pork prepared at ;he market with the chine bone sawed loose from the ribs. Wipe the meat with a damp cloth, dredge vith flour, and season vAth salt and pepper. Place the roast on a rack in an uncovered roasting oan. Scar for fifteen minutes in a hot oven. (489 degrees Fahrenheit). Reduce temperature to 325 degrees Fahrenheit, and continue cooking until the roast is done. Allow thirty minutes per pound for roast ing. Boil sugar and water together until it spins a thread. Pare and core the apples. Cook in the syrup until they are transparent and tender but not soft. Fill with cranberry jelly and serve on plat ter around roast loin of pork. The feed was corn, tankage, alfalfa ncf\ and mneral mixtiire. The pigs weighei approxifnateiy 68 pounds each when the test begarr and they wee slaughtered at 200 pounds. The pigs m the 4-pound basis reached the ?00-pound goal first.. It took them only 119 days to dm it, but they required more feed than the others. Those on th^ 3-pound' ration took 128 dkys: The lot, which got only 2 pounds of feed daily for 100 pounds live wt&gtofc took 166 days but made the most economical gains. The -‘U three groups used 559 pounds, 458 pounds and 395 pounds of feed respectively per pig to reach 1 the' slaughter weights. The tests showed that 100 pounds of feed produced 24, 29 and 33 pounds of pork when fed at the 4. 3, and 2 pound levels. In other v -rds, the mo^t restricted ration produced a. third more^pork on an iqual amount of feed, but in a 40 per cent longer feeding period than, the full-fed lot. The leanest pork was produced on the. lowest, feeding, level.
