Drying of Vegetables.
Many vegetables and fruits, which
often go to waste can easily be con
served for hhme use by the simple
process of drying. Drying is a cheap
way in which to kee!) vegetables as
dried vegetables keep well and require
siittie space and inexpensive contain
ers. Vegetables and fruits, if pro
perly dried, retain .their naonral flavor
and food value and when properly
cooked can be made into most attrac
tive and wholesome dishes.
Vegetables and fruits cal be dried
in the sun, in trays or racks over the
kitchen stove, in the oven or in a
specially constructed drier.
To secure a fine,quality of dried
product the vegetables must be also
lately fresh, outing, tender and per
fectily clean. After the vejgetables
are prepared properly I hey a re
lanched or given a light cooking in
boiling water iII order to change or
coagulate the albi )mious matter and
thereby preven t the dried vegetlables
from tasting like haw. The vegetables
are placed in chieese cloth bags or
wire baskets and boiled from five to
ten mn i tiles depending on the vege
tables being dried and tile maturity
of the vegetables. The blanch gives
a more thorough cleansing and soft -
ens or loosens tle fiber allowing the
lloisture In the vegetables to evap
orate more rapidly. After blanching

move suirface, moisture by placing be
tween two towels. The vegetables
tha3 prepared are spread in hin lay

in oven begin drying at temperatirc
of 110 degree F. and increase gradui
ally to 1-. degrees F., and coliplete
drying in two or three hours. The

improve flavor a teaspoon of salt to

in about' 1-8 inch strims and blanch
three minutes; remove surface mois
ture, and d ry slowly from 3 to -I hours,
raising temmerature 'from 110 to 1.10
degrees F.
Green string beans.-Very young
and tender beans can he dried whole,
if full grown e'.it in one I ich lengths.
Place 'In bag and blanch in boilinug wa
ter for 6 to 10I minutes. One-half lea
spoonfull of soda may be added to
eaeh gallon of water to help set the
green color. Reilove surface imois
ture and dry from 2 to :3 hours at sanme
temperaturv' as corn.
Storing Dried Vegeaitldes.
When vegetables are first takn
f'roml fihe drier, If comlpletely dri-ed
they are very hrittie. This will sooni
disappear when exposed to the air.
D3ried vegetables should always be
stored in moisture-proof col tainers
and in a dry 'ilace free from dllst and
dirt. The best container is a tinl box,
biueket or can fitter 1-1ih a perfectly
tiht cover. Tle cheapest an(1 m1ost
coitvenlent container is a paper bag,
painteui wi'h a coat of melted paraffin.
