INTER.-There is one way which

who has tried it says. 'There seems to
be something in tils process that makes
the butter come. . Do not let the milk
stand till it soup, befoe kimgitng.
If you do the buttoa will te bitter and
full of white flakes. Churni at least
twice A week in winter, whether you
have little or much cream. It may be
warmed and soured by ' svery simple
process, when one thinks how to do it.
Fill a tin can with boiling water, cork
it tight and sink it into your cream
far. That will do $he business. De
lure and get a dairy thermometer, if
you have not one already. Bring the.
,ream to a temperature of 60 to 02 degs.
with the hot water can.. Plunge your
thermometer into it to test when it is
exactly right. When it is, churn.
Your butter will come speedily, and it
will be firm and sweet. If 3 our cows
kre fed properly it will be yellow, too.

ITESTS FOR SITTING HENs.-Mis
Cakes are made with the nests of sitting
hens. Too many are made that are so
slmll that the hen is unable to' perform
her duties of sitting down upon and
stirring the estgs without smashlng one
or two. A roomy nest should be sup
plied-not too large-having a bottom
of rather soft material resting on dirt,
with a plenty of straw well packed
about the sides. Such a nest, especially
early in the season, is very desirable,
retaining as It does the heat for a much
longer time than a carelessly made nest
of loose hay in a box. The best recep
tacle for a nest where one has plenty of
room is an ordinary flour barrel.. Uut
In the side a hole large enough for one
hen to pass through, and then hinge a
small door to open and shut at pleasure.
The auvantage of such a nest is that
nothing can be more secluded. There
are no draughts of cold air sucking
through the cracks into the nests.
They are easily inspected if not made
too deep, and there Is ample -space for
)ny hen within the barrel. A door pre
vents the hen from looking out niuch
better than a wire screen. A hen that
cannot see all that is going on outside
is less restless.
IN determining the quantity of milk
something . else than cream should be
considered. The total percentage of
solids may be large, yet the fat may be
of only a small proportion, though the
real nutritive elements may be in excess
as compared with milk of inferior
quality. Hence, milk is often consi
dered poor because cream may be lack
Ing, though it may contain a larger pro
portion of solids than that rich in cream.
In a test with five cows of the same
breed the total solids in the milk varied
from 14.52 per cent.-to 18.95 per cent.,
yet the ash from the milk of one con
taining 17.11 per cent. was more than
double that from the milk containing
the largest percentage of Molid matter.
One of the cows gave 12.72 per cent. of
solid matter, with 2.44 per cent. of fat,
while another giving n11k yielding
14.52 per cent, of solid ma ter gave oiily
1.69 per cent, of fat. 'Ihis variationi
may be only for a days As before
stated, the quality may be altered by
the character of the feel, it demon
strates, however, that some other stan
dard must be adopted fc r estimating the
fai iir
-it in proportion to his outlay.
AIANURE~ should be put around rhu
barb roots and the small truits, and
upon the asparagus beds, as sooni as the
ground thaws, if it was not done last
fall. All of them wvili bear~ liberal
manuring, and will pay well for it.
Prepare the botheds as early as posslble.
Every farmer should have one, in
wich to grow his supply of lettuce,
cabbage and ton'iato plants, if a few
potatoes are sprouted in the hotbed they
can be transplanted when others are
planting potatoes, and about two weeks
can be gained in the time of growing.
Seime farmers also go so far as to start
their sweet corn, cucumbers and a few
other vegetables which they wish .to
obtain early in this way.
iPROFESSOR ALAVORD states the best
time ror cutting sweet clover to be
when in full bloom. A few plants will
scent a whole barnf ul, and thus give
the requisite flavor -to the hay without
the cattle ever coming into contact
with it as a food. Since all these
flavors are caused by volatile oils, It
may be that chemists can furnIsh thme
requisite oils without feeding anything
specially to produce them.
