AGRLUULTURE. How LONG BuTraI WILL Kiip.--. few years ago while a well was bein cleaned, a half pound of butter wr found in the byttom as gool and swo< as when first made. How long it hu been there no one knew. The presel occupant of the premises has been fi: teen years on the place, and the pum being in constant use there had been n occasion before to have it cleaned. Th butter must have been there all thi time,an<t how long before is not knowr The outside was of a paler color tha that within, but otherwise there was n change. It is not unknown to good dairy folk that butter will keep well in cool, pur spring water, and some have taken ad vantage of the fact to preserve butte in close vessols under the surface. iJu we think it is not generally known tha it would keep so long and in actual con tact with the water. It might be o great value whether this hint abon preserving butter might not be takei advahtage of, so as to initiate at regula: plan of preserving butter sweef an( fresh, until markets or other cireumu stances favor good prices. It is one o the weaknesses of the butter busines, that at some seasons prices are ruinous ]y low, and the usual remecy of potting is not a very good cure. The water of course must be cool and pure, At a high temperature, such ai most water near the surface roaches vegetable organisms grow that woul soon communicate decay to any organi matter in the water; but there are ma; places where a lagoon of the prope. condition of pure wEll-water could rea tilly be constructed. It may not be out of place hera to ro mark that little lunts such as there ar continually occurrig in almost evor3 one's experience, but only soon to bt forgotten. NE'TrLE BaRn.-Boil a good bunch of g nettles, freshly gathered, in two and a as half gallons of water, for fifteen minutes; it strain the water from the nettles, and d add 2 pounds of loaf or moist sugar it and 2 ounces of cream of tartar; stir ,- until tho sugar and tartar dissolve. p When just lukewarm add two large o tablespoonfuls of good browers' yea'it, D or - ounce of German yeast, mixed s smoothly in a cup with a little of the water first; stir into the rest and leave ai it twenty-four hours to ferment, covered a with a board or cloth. At the end of the twetty-four hours skim every par a ticle of yeast and scum oil' the top, pour o the boor carefully from the sediment - and bottle it. The corks should bo r sound and soaked in boiling water ton t minutes before being used. It is safer t to tie corks down with wire or string. - The beer will be ready to drink in two f days, and forms a cool, pleasant bevor t age. It is diflicult to defilno the exact t quantity of nettles to use, but, guessing roughly, about a hundred big stalks l with the leaves on, of courro-would . make a good bunch. Somo people pro for using only the tops of the young nettles, but it makes no appreciable difference either way. A Voico from tlei Northwcest.
