us the other day that last ytar he had
constantly for several months green
peas upon his table, of his own raising,
and that they lost nothing of their de
liuiousnaes. There is n, diflloulty in
this, if gardeners are instructed to go
steadily on with their plantings through
the season; but few will do it on their
own account, -as it adds to their labor.
The way, however, to raise the Atest
quality of peas is,alter tn Jirstiowings,
to plant them deep and mulch them, so
that the soil they root in is always cool
and uoist. In thu careless mann or in
which peas are olteu cultivated that
they have very little flavor and delicacy.
It is so with raising what is caled te
buap-eblort beans. They are seldom
planted ieop enough, and as a conuse
quence have no unore flavor than a
piece of Ihdia-rubi,cr, and about as
tough. .But the beans planted in l3ep
tenuber, and in due time are for sale in
our narkett, are really deliciout in fit
vor and tiairly met in their mouth.

ScALLOrED CLAMS. -Scald the. olams,
drain oft the liquor and chop them up
very flue. Butter the cavities of a
numbor of large clam shells, or, if pre
ferred, a number of individual vegeta
ble dishes. Put in a thin layer of gra
ted bread crumbs or cracker dust (the
bread crumbs are to be preferred), then
a layer of the chopped clams, a few
small pieces of butter, a sprinkle of
chopped parsley and a dust of black
pepper; then a layer of bread crumbs
and another of clams, etc., and so on
alternate by until you have the desired
quantity, the last layer being bread
crumbs, upon which lay two or three
pieces of butter, and pour in a small
portion of rich cream or a little sherry,
or a little of the strained liquor from
the scalded clams. This liquor is, how
over, often very salty, therefore care
must be exercised in the use of it. Set
your scallops in a baking pan and cook
in a moderate oven for fifteen or twenty
inmutes, or until the tops are of a del
unte yellow color. Servo very hot.
