When a man is too wise in his own conceit to learn, he Is generally too ignorant mid too full of pro judice to comprehend the plainest and most. Important precept. These self im portant tarmers are generally on the down grade, and no ordinary check will have the least effect on them for the better. A far mer mustto a great extontlearn of others, and this must necessarily be mainly done by reading. Theories and instructions on agricultural subjects are more reliable When printed than those whioci are merely verbal. Public declarations of facts: and theories are subject to criticism, slid thus the truth on almost any subjeot can be elicted. Hence articles In newspapers are prepared with moae care than the more declaration of opinions in a verbal way. And it would be difficult to find a farmer who is now pursuing the advanced system ot agricul ture but what takes and carefully reads from one to five papers on the subject of his greateett interest. PRwPAR D EBUIF, --reople who be. come tired of the ordinary meat diet who are not well and find it difficult to digest meats cooked in the usual way, will, perhaps, be interested in a now method of preparing beef. It is espec ially recommended for invalids, partic ularly consumptives. The theory is that a majority of diseases arise from improvished blood, and that a contin ued diet of the digestible part of beef is most effectual in enriching the blood, and thereby improving the general health, The meat should be chosen with care, selecting the best beef, and taking about the third out of the round. For the daily use of one person, when itlis used as the entire diet, about three pounds is required. This should be relieved of all the fat avd bone, and then cut rato pieces some three inches square. These are placed in the pail of a patent beef ehopper, and chopped for live or ten minutes vigorously. At the end of that time the muscles pulp which has collected on the top should be seraped off with a spoon, and the same process continued until nothing but fibres remain at the bottom of the pail. The pulp which has been collec ted is then pressed into round, flat oakes and broiled over a quick fire. It should be seasoned with salt, and for a relish, butter, pepper, lemon, or any sauce may be used. Enough beef will remain on the fibres to make quite a little soup or beef tea. Ar, AnouT Bnkrsmo BcuF: Take from four to six pounds of beef from iho round or the face of the rump. Trim and tie in shape. Rub the meat well with salt, pepper and flour. Cut two onions, one-half of a small carrot, one half a small turnip very fine and fry them until a light brown. in salt pork fat or drippings. Skim them out in a braising pan, then brown the meat all in the seasoned fat, adding more fat if necessary. Put the meat, when brown ed, into the pan, add one quart of boil ing water and a tablespoonful of mixed herbs. Cover closely and cook in the oven four hours, basting every twenty minutes. Tumn over ofter two hours. When tender take up the moat, remove the fat from the gravy, add more salt and pepper and thicken with flour cooked in butter. Cook ten minutes and strain over the meat, or serve with horse-radish sauce. MILK SOUP. -Wash, pare, slice and parboil one pound of potatoes, pour away the water; skin and scald two onions, chop them; place the potatoes, onions, one teaspoonful of salt and half a teaspoonful of popper in a stowpan, with one quart of cold water; bring to a boil and boil till quite soft (about a half-hour); crush the potatoes and on ions with i spoon till smooth, add one quart of now milk and one ounce of crushed sago; stir continually till it boils, then boil for ten minutes. This soup may be made richer by adding one ounce of butter or dripping to the quart of cold water; also by putting a yolk of an egg, woll beaten, into the tureen, and mixing the cooked soup slowly with it. The soup must be off the boil, or the egg will curdle. IlEciPiE Fon LiMING Eoas.--For lim ing eggs a picklo is maceo of pure stone lime, tine, clean salt and pure water in the following proportions: Six to eight quarts of salt, sixty to sixty-flye gallons of water and one bushel of lime. The stronger the lime water and the more free from sediment the bettor. Black the lime with a portion of the water, then add the remainder of the waiter and salt. Stir well three or four times at intervals aind then let it stand until wvell settled and cold. Either dip" or draw off the ocar pickle into the cask or vat intended to prsev the eggs. This is on a iarge scale, but may be proportioned according to judgement for family use. DIRIEoTIONs Fonl MAKING llnEiAD SAUCE: Dry and roll one cup~ of stale bread crumbs; then sift them. Boil the line crumbs, which will measure one third of a cup, with one pint of milk and one tablespoonful of chioppedt oniou, for fifteen nminutesi. Adld 0one table spoonful of butter, one-half a teaspoon fual of salt and one-half a saltspoonful of pepper. Fry the coarse crumbs in a tablespoonful of' hot browvned butter, stirring with a fork until they absortb all moisture. Put the white sauce in the platter withI the grouse or other birds and sprinkle the brown crumbs over all. To CooK .InIAIsIID UALF's-HEARiT: Wipe the heart well and stuff it with oracker crumbs seasoned highly uiith salt, pepper, thyme and onion and moistened with melted butter; lard, dredge with salt and poepper, put it in a small braising pan~ and half cover with brown gravy. Bake one hour or until tender, basting often. Serve with sauce piquant, made as, for any brown gravy and seasonedt with lemon or vinegar and chopped pickles, A ntucwe for larded grouse: Singe and clean tihe birds, then wash and wipe diry. Lard the breast and legs; truss them, then dredge with salt and pepper, rub wit~h soft butter and dredge with flour. Bake in a very quick oveon, twen ty minutes, if liked ramre, thirty if they are to be served well done, Servo hot, with bread sauce, garnish wf th parsley. How TO MAisa HousEC-nADmsU SAucE: Four tablespoonfuls of grated horse radish, four tablespoonfuls of powdered craoker, half a cup of cream, one tea sp~ooniful of powdered sugar, 01n0 tea spoonful of salt,, half a saltspoonful of pepper, one teaspoonful of made mus tard, one tablespoonful of vinegar or enough to give it a good sharp taste. Mix all together aind heat over hot wa ter. AN Oecllont shampoo is made of salts of tartar, white castile soap, bay ruin anld lukewarm water. The salts will remove all dandruff, the soap will sof ten the hair and clean it thoroughly, and the bay rum will prevenit taking cold. IN purchasing honey avoid that which has while specks, as they destroy the flavor of any comb in wvhich they are fondm. To clean diamonds nicely, wash in soapsuds, rinse in alcohol and dry in sawdust; then brush with a soft brush and polish with fine tissue paper. To remove steins from table linen hold uip the soiled spot and pour through it boiling hot water.
