comes in contact changes the ammonia
into saits, which vary according to ihe
kind of acids united to it. The salts of
ammonia do not remain fixed in character,
for, being ever changeable, they are con
tir.ually being broken to pieces and re.
formed Dy acids ktronger than those to
which it haA been joined, and iliqir char
acter is regulated by the ingredients, con
tained in ths soil. ihe manure should be
spread as soon as hauld, -for if left in
heaps the rains leach' thbuli, and the soil
will be richer in some places than mothers.
The soil, however, must 31so be taken into
consideration, It is not the better plan to
spread manure In the fall on light, sandy
soil tdat is porous, for the heavy rains and
inlting snows of winter will carry away
a great portion or it and cause waste of the
soluble substances. On heavy soils, such
as are underlaid with clay, the advantage
is to spread in the fall, but it the land is
rolling it should first be plowed before
spreading, in order to prevent washing.

A aooD recipo for marbled cake is s
here given: One cup of buttor, two cups a
of sugar, three cups of lour, and four
well-beaton eggs, one cup of sweet milk,
two teaspoonfuls of baking powder
mixed with the flour. Dissolve a heap- a
ing tablespoonful of chocolate with a c
little milk, better still with cream. 1
Then dip out a cupful of the cake bat- J
ter, and stir the chocolate in it till it is f
all thoroughly mixed and brown. Cov
or the bottom of the cako tin, with the
batter, and then in two or thre places
form little rings with the chocolate-col
ored batter, then put in another layer
of the light, and so on until all is used.
This cake should be baked in a moder
ato oven, and the top and sides also, if
you choose, be covered with chocolate
icing.
MACARONI AU GRATIN.-Tako half a
pound of spaghatti macarroni, four oun
ces of cheese, two ounces of butter, ,
three-quauters of a cupful of Bolchlamel
sauce. Do not mash the macaronni. -
Throw it, broken into convenient pieces,
into boiling water which is well salted; a
stir or shako it frequently, The mo
niont it is quito tender pour it into a
colander and shake off all the water. f
When well drained, pour over it nearly
all of the sauco and the grated cheeso; I
turn it in the saucepan, mixing it well
together without breaking the macaroni;
put it into a gratm dish; pour first the I
remainder *l the sauce over the top,
then the remainder of the choeso, and I
over this sprinklo a tablospoonful of i
cracker dust and dots of butter. Put
-it into a very hot oven ten minutes, col- t
oring the top.

of butter, one of sweet milk, three and d

in jolly-eake panms. For icing, grate one
