It Is an advantage to spread ma nure at this season, as the frost and expo sure to the air and rains convert it into a fine condition and hasten its decomposi tion, which is what the farmer wishes. These is no doubt of the formation of am. monia, owing to the decomposition that takes place, but anxmuonia Is largely absor bed by water, which carries it/duwnward, and once it finds its way into the soil the vegetable and mineral acids with which it comes in contact changes the ammonia into saits, which vary according to ihe kind of acids united to it. The salts of ammonia do not remain fixed in character, for, being ever changeable, they are con tir.ually being broken to pieces and re. formed Dy acids ktronger than those to which it haA been joined, and iliqir char acter is regulated by the ingredients, con tained in ths soil. ihe manure should be spread as soon as hauld, -for if left in heaps the rains leach' thbuli, and the soil will be richer in some places than mothers. The soil, however, must 31so be taken into consideration, It is not the better plan to spread manure In the fall on light, sandy soil tdat is porous, for the heavy rains and inlting snows of winter will carry away a great portion or it and cause waste of the soluble substances. On heavy soils, such as are underlaid with clay, the advantage is to spread in the fall, but it the land is rolling it should first be plowed before spreading, in order to prevent washing. MACARONI AU GRATIN.-Tako half a pound of spaghatti macarroni, four oun ces of cheese, two ounces of butter, , three-quauters of a cupful of Bolchlamel sauce. Do not mash the macaronni. - Throw it, broken into convenient pieces, into boiling water which is well salted; a stir or shako it frequently, The mo niont it is quito tender pour it into a colander and shake off all the water. f When well drained, pour over it nearly all of the sauco and the grated cheeso; I turn it in the saucepan, mixing it well together without breaking the macaroni; put it into a gratm dish; pour first the I remainder *l the sauce over the top, then the remainder of the choeso, and I over this sprinklo a tablospoonful of i cracker dust and dots of butter. Put -it into a very hot oven ten minutes, col- t oring the top. For icing, grate one cocainut, boat whites of t~wo eggs, aind ~ add one teaeaupful of p)owdered sugar; V mix thaoroughly with the grated cocoa- U nut and spread evenly on the layers of a cake whenm they are cold, a a EvE Puidkiiag.--Put into a mixang i bowl half a pound of line broad-crumibs t] mixed with three ounces of suet chopped a and sifted, four tart aupples, peeled, n cored and chopped, a cup of currants, the rind and juice of a lemon, a little salt, three eggs, and a little sugar p~ut inito a pint of cider, with which it is to a be wvell mixed. Boil in a cloth or mould e two hours (or steam it, four hours), and a serve with a imot liquid sauce flavored I with nutmeg. RUMt SnEainET.-Rub loaf sugar over the rinds of tharee fresh oranges.
