nything of the kind; to protect orchards,
are a very good thing, if protected on the
proper side; but nine times out of ten the
protection is on the wrong side, which is
almost always seen on the north or west
side, whereas it should be on the east and
south sides. It is the cold that injures or
chards and the protection on the north or
west will scarcely make I, any warmer.
An orchard should always have a northern
and never a southern exposure. And why?
Because the southern exposure will cause
the buds to expand so early that the frost
will nearly always catch and kill or dam
age them. On the contrary a northern ex
posure will keep them back until after
danger from frost has passed. If the frost
melts away before the sun reaches the
bloom, tie truit will not be killed; but if
the orchard has an eastern exposure, so
the early sun can reach the bloom, the
fruit will nearly almost always be killed
by a sharp frost. If the orchard has a wes
tern exposure, or Is protected by dense
woods of tall timbers on the east, the frost
will melt away before the sun reaches It.
The orchard thus protected will bear every
year. . I have noticed this for many years
and khow it to be true.

DOMESTI.
FLORIDA GRAPB FaUn.--This fruit Is
refreshing and wholesome, especially for
a billious temperament. Its flavor is
sub-aoid, but Its luify pulp is inolosed
in a tough white membrane of intensely
bitter taste; when this membrane is re
moved the fruit is dellolons. It has
become the fashion to use it as a salad.
The fruit is placed on the table whole
(one is enough for a party of four or six),
cut in quarters and serve au natural.
When not used as a salad, out the skin
in sections and peel It off; separate the
sections as you would those of an or
ange, and, holding each one by the
ends, break it open from the centre,
disclosing the pulp; tear this out of the
white membrane which covers the sec
tions, carefully removing every part of
it; keep the pulp as unbroken as possi
ble and put it Into a deep dish with a
plentiful sprinkling of fine white sugar.
Let it stand three or four hours, or over
night, and then use the fruit.
TmPE Cunny,-Boil two pounds of
tripe and out it into strips; pool two
large onions and out them into square
pieces; and put the onions into a stew
pan with three tablespoonfuls of butter.
Let it stew till brown, stirring well and
mixhig a tablespoonful of curry powder.
Now add one pint of milk and the cat.
sup tripe. Let all stow for an hour
skimming it well. Berve in a deep dish
with boiled rico also to eat with it. An
East India curry powder is made thus:
.Pound very fine in a mortar six ounces
of coriander seed, three-fourths of an
oiue of cayonne, one and one-half
ounces of foonugrook seed, one ounce
eummium seed and three ounces of tum
eric, These articles can be bought at a
druggists. round fine; sift through
fine n, !slin; Ppread on a dish and dry
before the fire for three hours, stirring
freqaently. Keep this in a bottle with
a glass stopper.
FRUIT PUDDING. -Three pints of milk,
eight Boston crackers split and buttered,
six eggs beaten light, two cups of sugar,
one teaspoonful of salt, quarter of a nut
meg grated, half a toaspoonful of cini
namon, one pound of stoned raisins,
quarter of a pound of curranta, Boil
the milk, and then add sugar, eggs and
flavoring. Butter a deep pudding dish,
put in a layer of crackers and moisten
with a little of the custaid. Thou add
a layer of fruit, and do this till all is in
the dish. Pour over the rest of the cue
tard and bake in a slow oven. Brawn
at the last, and cat hot with or without
sauce.
VINNA COFFEE. -Equal parts Mocha
and Java coiteo; allow one heaping
tablespoon of cof'oo to each person, and
two extra to make good strength; mix
one egg with the grounds, pour on the
coffee half as much boiling water as will
be neoded, lot the coffee froth, then
stir down the grounds and lot it boil
five minutes; thon let the coffee stand
where it will koop hot, but not boil, for
five or ten minutos, and add the rest of
the water. To one pint of cream add
tho white of an egg, well beaten; this
is to be put M the cups with the sugar
and the hot coffee added.
FIRENCIJH STEWED OYTsInS. -Wash fifty
large oysters in their own liquor, stram
thbo liquor into a-stew pan, p)utting the
oysters into a pan of cold water, season
the liquor with a half pint of sherry or
maideira, the juico of two lemons and a
little miace. Boil this liquor and1 skimi
and stir it well, when it comes to a bo011
put in the oysters weoll drained, let them
get heated through, but (10 not boil
them. Many people consider this the
nicest way of stowing oysters.
. 8'rxAano Fmsu. -Place tail of fish in
its mouth and secure it, lay on a plate,
pour~ over it a half pint of vinogar sea
soned with peppe)Pr and salt,; let standl
an ho~ur ini the refrigerator, then pour
oil' ti~e vinegar, and put, in a steamer
over boilimg water; steamn twenty min
utes, or longer if thoe fish is very large
(when (done the moat easil y parts from
the bone.); drain wiell, and serve on a
napkin garnished with curled p~arsley.
11AM (jOOKED rN CIuim.-Puit a pint
of eider and a cup of brown sugar into
enough water to cover the hanm; boil
three houirs, oi until the skin willi peel
off easily. Rtemove the skin, cover the
ham with a crust of sugar, and bake in
a slow oven three hours, Dissolye a
cup of sugar in a pmiit of oIler and baste
the ham frequently while baking. If
tihe cider is very sweet use less sugar.

p)aint it is to stretch it ever a frame in

Transparent. colors only are used, mixed
with gold size and a little turpentine.
MINT SAUCE.-Wash the sprigs of
mint, let them dry on a towel, strip off
the leaves and chop~ them very flue; put
mn a sauce-boat with a cupful of vinegar
and four lumps of sugar; let it stand an
hour and before serving stir all togeth
er. Mint saucQ, if bottledI, will keep
for some time and be j ust as good, if
niot better, than it was the first day.

(Oiwun Pus.-Take One cup of molas
ses, one cup of cold water, one teaspoon
fual of soda, stir together and pour into
the crusts; then take three cups of flour,
one cup of sugar and one cupi of butter,
rub well together aind sprinkle over the
tops of the pies; set in the oven and
bake until light brown. Tihis recipe
wvill make four pies.
BAKED) Q~UINC1s.-Take as many as
you like of nice, smooth quinces; wvipe
them, put them in a pan and bake them
until you can run a straw through them
easily. While hot take the skmns off.
Take out the the cores, put your quin,
ces in a (ihl and cover them with line
white sugar, When cold eat with cream,
