mals and plants,nature is a stern task
master. Only those are allowed to

If they fail in the development of their
physical and mental faculties, they
are soon replaced by other animals, or
plants which have outstripped them

Now among the domesticated ant.
mals, the pig has been hitherto con
sidered the consumer of garbage par
excellence and is kept and tolerated
mainly for this reason. Twenty years
ago the rabbit was brought forward in
compotition, but It was not a success.
France certainly adopted rabbits and
turned a cold shoulder to the fat and
dirty pach yderm but the swine did not
care. If Frenchmen lived on rabbits
pork retained its away nearly every
where else and they grunted -dellance
alike at the tidy little rabbits and their
polite protectors. What else might be
expected of frog-eaters like them ? Lot
them take their custom elsewhere and
welcome. People with sense and a
digestion would require pork for ever
and aye; Americans, Engiislinen and
Germans would know how to appreci
ate its merits.
The pigs ieally held their own in
the market as well as in argument.
But of late there Is a fresh stir among
them, for another anImal is pushing
them hard in the struggle for the post
of honor among the viands which are
daily converted into human beauty,
human energy, human intelligence by
the processes of mast.ieation and diges
tion throughout this broad land of
ours. The feathered birds, ducks,
geese and turkeys, and especially
chickens have entered the lists against
them and lustily crow a challenige for
the position on the national bill of fare
which has been for generations con
sidered as being above the aspirations
of even the most ambitious birds of
any family whatever.
Poultry, as is well known, consume
garbage quite as well as pigs an(d
miuch more thoroughly. Their personal
qualities are in some respeti less of
lensive and if some people cainlot
stand their morning song, why the
lay of a full-grown porker or the
squeals of his sons and heirs are also
far from agreeable to the human oar.
The drawbacks therefore whicli may
be laid to the charge of the winged
creatures are comparatively ligit.

ought to be Judged. with more thian
human leniency - their fligiiness.

SUMMER SALAD.-People who dine
at hotels, and eveni dometimrs at gen
tleman's tablesy seldom find a- salad
that is really- excellent. Generally
speaking, it is a black-green, bitter,
and if it were not for the liberal ap
phiance of mus tard, eggs,oll and paper,
it would be quite unfit for any hilman
atonmach. How diflerent this is frorn
what a cool, dolicious salad otaght to
be, it peems practically to be for
gotten by those who grow salid, that
lettuce was never tut...nded to be eaten
unless blanched, )n $urope they
grow a lo4k, broad leaved kind called
the Roman or Cos lettuee, which,
after having retained considerable
levelopment, has the loaves drawn up
and tied together at the top. The in
terior continuing to grow, and of
course in the dark, by the tying up of
the outer leaves makes a hard mass
like an elongated cabbage, whioh cuts
up as white and orlsp and sweet as a
stick of eelery. This kind has never
found a place in American gardens,
because our climate induces it to run
to seed too quickly. The yarious
kinds of cabbage lettuce are preferred,
because they oJose In their leaves na
turglly and are supposed to blabch
themselves. But this is, as we have
shown, a pleasant fiction, as there is
very little of the wgito about any that
we see, except where there Is great
success in growiug them into heads.
Of course, our country Is not so well
adapted to the growth of good lettuce
as England is. It will not stand ex
treme cold, nor does it like warm days
and hot suns. It wants to go to seed
as soon as the temperature goes over
65 degrees. But we could have much
better than we do. In the spring a
tolerable article is generally obtained.
Oi our own premises we never fall.
Started by a little protection from
frames, it is brought to perfection be
fore the warm weather comes. To
have it good later Is not difficult, by
employing very rich land and as cool
1 spot as can be secured. All vegeta
bles that we value for their succulence
require a rich soll to their best devel
Dpiment, but it Is an essential to good
summer lettuce.
STILTrON CUxKIsc.-An English cor
respondent sends us the following
Method practised in making the cele
brated Stilton cheese: The night's
ream is added to the milk of the fol
lowing Inorning,or If the cieee is de
sired to be very rich, a still greater
proportion of cream. The rennet is
then added, but no coloring matter is
used. When the eurd has come, un
like the method- pursued in making
inost other cheeses, It Is taken out with
out being broken and put whole into a
[lralner, where it Is squeezed down
hard until the wiey is entirely plessed
out. When dry it is put, with a cleanl
cloth, into a vessel and placed be
neath the press, the outside being first
well saltet . When sutlailently firm to
be removed It is put upon a (ry board
Ind tightly bound around with r, cloth,
which must be changed daily, in order
to avoid cracks in the skin, until it is
found to have a coal formed, when
there IS no occasion for It. further use,
ind nothing wore necd he done to the
cheese than to brash ocaasionIAlly and
rrequently turn it upside down upon
the shelf where it may be placed.

ley Esq., of Pittsfield, Attorney-at
Law and Asst. Judge iolloe Court, and
late County Coiniissioner, was re
