Although the fat is considered by
many to be so much waste, still "a fat
han" always furnishes tenter, juicy
and fine flavored meat, while a lean
han Is ver, often tough and dry when
cooked. The loint should be well
rounded and plump, rather than thin
and fat. The skin sh'muld be thin and
phable. Choose freshly cured hams.
Wines Improve by age, hanis do not.
The more recently the joint has comne
from the curing cask (other things be
Ing equal), the bet-ter It will please
when cooked. Formerfy the years
supply was packed In the winter, and
after sinoking, mu-t needs be "can
vassed" or "bagged" to preserve It
against the ravages of ieg, and in this
