producing specks of curd in the butter
may be and are usually, caused by ill
liealt in the cow, by whieh the con
dition of the blood is affected. The
milk in its normal, healthful condition
is slightly alkaline; but when: the'
blood is out of condition it, alkalinity
may be much Increased, or the inilk
may be acid. In one case only, how
ever, have I found ropy mik bxcessiv
ely alkaline; in vert case in
which I have such mil rit has been
distinctly aild and has sometimes show
ed, by the test of litmus paper, a high
degree of acidity and has become very
soon completely curdled; the long,
fibrous clots placed under -the midros
cope, appear simply. as curd fotmed in
the ducts and molded by them.into the
stringy pieces which pass through the
teat into the-milk. The ropy or strin
-y'matter is easily dissolved in-a solu
tion-of carbonate of soda or potash, and
-l would therefore seem to be caused by
aclalty. The white specks which often
appear in the butter are due to similar
causes,andl are merely particles of curd
or cheesy matter Which are formed in
the mil'k and adliere to the cream and
are carried up, and mingled with it,
qnd so go with it Into the churn. In
this case they are only partially re
moved by the most careful washing and
the.but.teris uneavodably Injured by
them.
The best remedy for all these trou
leis with the m ilk Is tb.Ad minister a free
dose of salts, one podtnd of suflphate of
soda& (Glauber salts) or of sulphate of
Magnesia (E4psom salts,) being dissolv
ed in wairm water, by means of a com
MOn dierwching horn : and after this
'I has operated, a daily dose of one ource
of hyposulphite of soda may be given
with benefit, for two weeks so as te
effectually free the system from all ac
idity. This salt is a most valuable me
dicine in the dairy on account of its
antiseptic and alterative properties,
and a pound or two of it may be bene
clcally kept for usc. It is readily ta
kt i when powde ed and sprinkled over
a mess of scalded bran or some cut feed
and it will be found useful in all these'
cases of trouble with milk. The in
proper bebavior of milk in the churn
is ue altogether to the after manage
ment of the milk and requires special
consideration.

crumb of a loaf of bread into slices two
inches thick-, and then with al round
paste cutterabou$ two inches 'in dia

e h cylinder of bread crumb. .Wheni
all are ready, fry -them a golden color
in'vei'y h>t lard.. A deep frying pan
should be used,'alid plenty of lard, so
that the crouibades farirly swim in the
fat. When done, lay them on a sieve
in front of the fire to drain, and after
ward remove the cover (marked with
the smaller paste cutter), and with the
haiidle of a LAs. oon scoop out all the
inside of each croustade. Mince finely
some remnants of roast or boiled chick
en, frce from skin, etc., add an equal
quantity of ham or tongue, as well as
a small quantity of mushroom, also
finely tuinced. Toss the whole in a
saucepan with a piece of butter, mixed
with apineh of flour; add white pep
per, salt and powdered spice to taste;
moisten, if necessary with a little
white stock. Stir in off the fire, the
yolk of %n egg, beatep up with the
juice of hall a lemon; R1ith1 ecroustades
with this mipce, put a button mush
room on the top of each, cover them
with a siheet of oiled paper, put them
Into the oven to get thoroughly hot,
and servc.
