INJURINO THi 1oita's EYMs.-It has
been observed that of all domestic ani
mals the horse Is most afflicted with
diseases of the eye, Some of these ail
ments are hereditary and from un
known causes, others--and these are
of painful frequency-are not inheri
ted, and their origin may be readily
traced. Of tils latter class of causes
may be mentioned insuflicient or bad
arrangement of light in stables; blink
ers: high racks for feeding; ammonna
finles in the stalls,.and tile whip. Al
though the eye of the horse Is well ad
apted for seeing at night, yet lie is not
a noctural aninal, therefore the stable
should have dtyliglit freely admnittedl
to it. A dimlylighted stable imposes
on the horse sudden changinig from
twilight to broad sunligit, whiclh can
not fall to weaken the sight. It the
windows tare arraniget on one side or
the other of a stall, the horse's head
will be directed mostly to the side froi
which the light comes; one eye will be
more in the shade than the other, con
sequently both eyes will be strained
fron being exposed to unequal light.
If the window is directly in front of
tho stall, a glare of light 18 directed
toward the eyes with a blinditig eflect,
whleh is very Inj urlous. Probably the
best arrangemnent for lighting stables
is by iieans ofi a skylight or windows
placed near the coiling. Muchli has
been said against blinkers, yet their
use continues to a considlerable exten t.
If the eyes of the horse, like those of
nin, were directed forward, blinkers
might prove unconfortable but not
injurious. The range of vision in tile
horse is niuch greater thain lin man ; by
limiting this rauge of vision matid allow
ing it a forward direction only-which
is not according to nature-the mus
cles of the eyes become strained and
their strenigth uipaired. It is not
reasonable to suppose that tie timid,

THE HOUSEHOLD.
LOBSTrv 1SOU.-Parboil two lob
sters, Hay, two of six pounds, and re
move the flesh; skim the water care
fully and keep It. When you have re
moved your lobsters, allow the water
to remain Oil the lire so as to reduce It,
say, one-third. Take the lobsters and
chop them line, then bray them in a
mortar. Put all back into the water
save two tablespoonfuls, which retain
for the making of balls. In the water
and lobster place 'an onion, salt to
taste, and white pepper, with a bou
quet of herbs, and a teaspoonful of
anchovy j.aste, or one anchovy beaten
with the lobster will do. When the
water Is reduced somewhat, add to It
one quart of cream; stir frequently;
remove the onion and bouquet of herbs
which are to be made with crumbs of
stale bread, the yoke of one egg, your
chopped lobster, and mace, salt and
pepper, and a little Ilour. Five min
utes before serving put in the balls.
Serve very hot; should be smooth and
creamy, with a very slight flavor of
the onion or herbs.

self." "How (10 you avoid it?'' I
questioned. "Why do you not see she
has p-ut all the handles in a straight
line. Now, I alwas set them
away so that no two handles shall
come together. Then, if they do
swell, I can have thorough use 'of the
handles, and with them the tubs. are
soon separated."

FILLET OF BEFi'.-Thle tillet of beef
Is the cut of one of the hind legs of a
steer which can aflord two fillets. The
one nearest the rump or chuck is the
best. English bit tehlrs speak of a
round (.1' beef and a fillet of veal. The
cost would be from eight to lifteen
cents per pound, and the weight from
eight to thirty poIiunds. Both price
and weight depend oi the quality of
the steer from which the fillet is cut.
T'IrP LYONNAs.-Take a poiund of
cold boiled tripe and cut into pieces an
inch square; dissolve two ounces of
butter in i frying-pani; add a sliced
onion to it and fry until It is tender;
put the pieces of tripe with the onion,
a tablespoonful of chopped paraley, a
tablespoonful of vinegar, salt, and a
little cayenne; heat all gently togeth
er ; cover the bottom of a platter with
toiato-satice, add the tripe, and serve.

An Ingenious system of winding gear.
for coal mines has lately come into use

ordinary draw and the great weight
of rope, which in deep mines, are a
very' great strain upon the engine.
The cages are attached ofie to each end
of the winding rope passing over the
head-gear pulleys and over a winding
pully, which takes place of the draw.
A balance rope of the same weight as
the winding rope is also- fixed to the
bottom of each of cages, this balance
rope-hanging freely in the ghaft, and
the lower end being allow~d to dip
into the sump at the bottom. By this
arrangement, however deep the shaft,
the rope and cages are always bal
anced and the engine, In winding up,
has only to overcome the weight of
coal in the tubs and the friction of the
working parts.
