FA*M AND GARDEN. TrING AwAY PoTAToUs.-Every ethod 4as been tried by farmers to store pieserve their potatoes through t winter, and we may say until po t,aWes come again. It is the most val uable of all vegetables, though here and there we find a person and a writer ho undertakes to tell us of its un. wholesomeness. It is universally con Sutned In all civilized countries, as ,Where It cannot be grown itis Imported, which can be done long distances with out injury when ventilation is atten ded to. In storing potatoes several methods are adopted, yet they are all practically the same, the object being to protect them against freezing, whether buried in pita or stored in eel are. The first consideration is to keep them in perfect darkness; the next is the bins should not be too deep-not over three feet-to produce warmth and cause them to sprout. When stored in the field, straignt trenches are dug, say twenty feet In length and four or live wide, which are filled to the depth of three feet with potatoes then well covered with straw, on top of which put eighteen or twenty inches of earth. In a pit twenty feet long there should be about three gas escapes or ventila ting openings, which should be plugged with straw and covered with a board set at an angle to tarn the rain. It in collare, barn or otherwise, the bIns should be covered with rugs, old ear potings or -straw. Those intended to be kept for late spring sales should,be frequently examined and all Fprouts removed; for as soon as a potato be gins to sprout it loses solidity, dryness and quality." ALL weeds should be out, gathered up, and burned, both in the garden and in the field-that is, if they have been left to ripen seed by neglect or by press of work in other ways. One is often so pressed with work that some things have to be left undone. Some thought less person may charge an industrious man with idleness or carelessness be cause everything about a farm or gar den Is not in a perfect condition of neatness, We who work know how it is ourselyes, and that so.nethings can not be done as well as others always. But if weeds have gone to seed, they should now be burned, and not go into the manure heap. There was never a manure heap yet so hot, unless it took fire and burned up,as to kill weed-seeds. A long-continued moist heat, as in a hot-bed, even, will not destroy weeds, as maybe noticrd in the vigorous growth of all kinds from the manure of an old hot-bed. It li rare that a manure hea) will heat above 100 leg., and we have found the soil to be 127 deg. under the sun's heat the present season. And yet the weeds grew all the faster for it. PLANT Atrirm TnEss.-While we ree commend farmers to plant apple trees, we do not wish to be understood as underrating all other kinds of hardy fruits, for all kinds of hardy fruits should be found on every farm. Bit, then, the apple Is the king of fruits. Its season is the whole year, late kevp era being on hand, if proper eare is taken of them, when the early varieties again ripen, It cnn be safely shipped all over the Union, and to Europe even, as it is now by the million bay rels al most annualy. It forms, or iiould form, a part of onel daily food. It is health ful keeping the bowels in proper con diltion ,IetIg on the liver and warding off bilious diseases. It makes nice preserves, Jellies, pies5, dumplungs anti1 other desirable dishes. The tree is long-lived, giving fruit for fifty years or more. No farm, no homie, is comn plete wvithout a large orchard of well selected varieties of apple1 trees. Every farmer who has not a goodi orchard should select the ground for one, plow and harrowv it, lay it off for the trees, dig the holes and plant the trees in early spring. OA'rs AND Wi SA'.-T1he experiment has been made of' sowing oats and wheat together with aL view to gaini a winter covering for the wheat. TIhe seed in the proportIon of one part of oats to two parts of wvheat, was sown in the fall and the oats sprang up atic(1 were killed by the early frosts, the stalks and leaves lying on the ground -all wvinter, keeping the snow from blowing away and preventing t-he sun from thawviug the frozen gi ound. When legitimately used in the cooking of a fat, juley beefsteak or a mutton chop it is good enough. But it should be held as an axiom that to broil a fish or a bird is wicked. Take a North iIver shad, for Instance; when it comes rrom the grid lyon all the delicate flavor of the fish ta disgiised by the taste of the butter which has been lavished upon It in order to prevent it from drying up. But the same fish steamed or boiled, and served hot with an egg sauce, or cold wit,h a sauce tartare, or In potted shape, can hardly be beaten.
