■ays that washing butter oannot injure
its flavor, because butter is an oil or fat,
totally insoluble in water, and all its
flavor* are component parte of the fat,
which cannot poetebly lie separated from
M it by contact with water. In washing
granular butter it is necessary to use
cold water, which seta or harden* the
granular atoms and prevents them from
combining in a mass. When butter is
taken from the churn in maAape the
water ahauM not be so cold as tohsrden
these, otherwise the milk cannot be re
moved easily, and then the butter will
not keep for any length of time in spite
of all precautions. In such a case the
butter placed in the bowl ia to be
worked down with the ladle in thin
slices, so as to provide outlets for the
buttermilk to escape. The milk which
escapes and flows to the bottom of the
bowl should be noured off and the but
ter washed with clear, pure water ; the
but ter is then turned in the bowl and
sliced in the opposite direction and again
washed, and if the work has been skill
fully done this is all the working that ia
necessary.
