SALAD may be either a
refreshing interlude be
tween the main course of
the dinner and the dessert,
or it-may be a dish sub
stantial and delicious enough, to
serve as the piece de resistance \if
the meal itself. The latter type of
salad is now very popular, and the
materials for its making are select
ed very carefully with due regard
to their food values, as well as their
fitness. Switzerland cheese in a 7
salad adds immensely to its tas<f-
ness as well as to its nutritive dual
ities, particularly the genuine Swiss
product made in the- Alps, which
has an aromatic Alpine 7 flavor pe
culiar to itself. This ty^e of cheese
is rich in Vitamine A, and has a
high caloric valug; Its content of
fat .and other propertied make it.,
especially aiia’ptffBTe for blending
with otherTood products.
Stuffed Tomato Salad:
Scald, chill and peel six ripe, firm
tomatoes of regular size, and hol-
ow out. Cut into dice four stalks of
celery, two dill ' pickled, one hard
cooked egg and enough genuine
Swiss cheese to. make ^one-fourth
cupful. Moisten well with boiled
dressing or mayonnaise, and fill the
tomatoes. Serve on lettuce leaves
with *hin whole wheat bread and
butter sandwiches.
Pineapple, Pear and Choose Salad:
Arrange Rliees of pineapple on
lettuce leaves pp ffiaivlSuatjSates.
and on each place a halted canned
pear from which the Core has been
cut, leaving a boat Shaped opening.-
Prepare a mixture of thin strips of
$witzerland cheese, mixed with
thin strips of canned pimientoes,
and shredded green pepper and fill
the pear hoats. Top with whipped
crearm salad dressing and arrange
segments of green pepper on the
pineapple slices. Serve with Bos-
tion cracker toastwiches.
Boston Cracker Toastwiches:
...Split hard Boston crackers and
spread with butter, rather thickly.
Place In the oven, cover i^ith thin
ly sliced Swiss cheese, brown deli
cately, v
Alpine Salad:
Boil four unpeeled potatoes/cool,
. PeeL‘iUiLxut. in -cubes. Add half a
cupful of chopped wainiitR, four
sour gherkin piciles, chopped, and
one-half cupful diced Switzerland
cheese, also a grating of onion. Mix
alt together well, moisten with
boiled dressing, and serve on let
tuce leaves, accompanying each
serving with a slice of boiled ham
and a lar^e stuffed olive.
Impromptu Salad:
Quarter large dill pickles length
wise, and cut strips of genuine
Swiss cheese to correspond. Ar
range on watercress or lettuce
leaves and garnish with strips of
