Peaches are most useful In the making of these late desserts, for the acid or the fruit is a great aid to diges. tion. Nice For Luncheons. Pech Cakes.-Tiake at cupful of flour, a teaspoonful of baking powder, a half teaspoonful of salt, one egg, a half cupful of milk, a half cupful of sugar, a tablespoonful of butter and six peaches. Sift the flour, baking powder and salt into a bowl; add the milk, beaten egg 1 and melted butter and mix together. Put on large, deep pie dish. Wash. pare and halve the peaches and put on top of batter, stone side up; sprin kle with sugar. Bake in hot oven. Serve while warm with milk or crenm. 'each Cobbler.-Take one pint flour, one-half teaspoonful salt, twiviteaspoon fuils haking powder sifted torttler sev et-il limes. one-quarter cupful butter rubbed in, one egg beaten and mixed with one scant cupful milk, one quar ter cupful cream. Bent this hatter well. iIi a granite baking dish about one-half full of pared and stoned peach es. Allow one pint of sugar to each quart of fruit; cover with batter and bake until peaches show a dark red color; cool and serve with sugar and crea m. Fritters For Tea. Peach Fritters.-Lay the halves of ripe, tender peaches on a flat dish, sprinkle with sugar. Let stand for -in hour, turning once. Dip each pieco separately in batter and cook to a golden brown in deep, boiling fat. The batter should be mixed several hours before It is needed. It is made by stirring one-half cupful cold water into the well beaten yolks of two eggs. Add to this gradually nn even cupful of sifted flour and a tablespoonful of olive oil. Bent vigorously for three minutes. Just before using add a pinch of salt and the whites of the eggs ieaten to a stiff froth. Baked Peach 'uddi ng.-Take one hail' cupful of rice and boil in a quairt of boiling water till tender. Add one vupfi of gra nuolated sugar. one table. spoOnfli or bint i or. nn1e1 when tle sugar 14 dissolved add Iiphe yolks of two eggs. (ook for one nintute. Rut tert a pud ding dish. add first a layer of rice, then a layer of peaches and so on unil the peaches are all used, finlishinug with the rice. Add one cupfull of the Pean-h Jule. Bake in) a moderate oven twen tv-five minutes. Tatke fron the oven and cool. Make a meringue of two whites of the eggs and two tablespoon fuls of powdered sugar.
