it-' PAGE STX i cow-pack ??ay of i canning food Method Endorsed by Department of Agriculture? Saves Sugar. j Canning time is here again. Strawberries are going, cherries are coming, and then straight through the summer there will be vegetables of all descriptions, fruits that will yield juices for jelly mak ing, fruits to preserve?and f nally the golden peaches of catly fall, ripening to be canned whole, in ? ,i. halves, or made into meiiow pmn i butter for winter mornings. I Time, sugar is scarce. Hut the method of canning endorsed by the United States department of agriculture points a way around t1 U difficulty. By the One-Period ColdPack canning method fruits may he canned without sugar. Hot water instead of syrup is poured over the fruit in the can before sealing. Of course if a housewife has plenty < f sugar and wants to use it, syrup is quite in order?but it is not necessary. Absolute Accuracy. The first requisite to success wit'* cold-pack canning is ab-olute ac curacy. Then, according to government teachers of this method, one must carefully unlearn all the lesold-time, more compli m'11r> vj viiv v. x. ?? , eated canning systems, such as the "open kettle" method, and start with an open mind to master the five simple steps of the cold-pack method. There are several variations of the cold-pack equipment for canning including hot water baths with homemade outfits and with c mmcrcial equipment, water-seal out fits, and steam pressure outfits. The steam pressure outfits save time, but home made equipment is quit as successful and calculated to ap peal to a majority of housewives by reason of its economy. Washboiler is Favorite. A homemade outfit may be made of such a receptacle as a washbciler, a large tin pail, a lard pail, milk can or a metal washtub. Such a canner must have a well-fitting cover and a false bottom or lifting platform of wood or metal. This false bttc-m is necessary both to sup port the fruit jars and prevent them from coming in direct contact with heat, and also to pppmit a free circulation of Center and steam around and Under the jars. i ih addition to the canner, a house wife should have at hand several bowls and sharp knives fur par'ng tho fruit o'* preparing the vegct. -^>tbles; wooden spoons for packi^ food into jars; plenty of clean wlrte cheese cloth and two large Jcett'es for the blanching and rold-dh>ptng process; a collarder, a supply of* ?^ coew rubber ringd for ue^i.ng' tha iars, jars sterdize! and tempered by | heating in water and allowed to cool in the same water; quart mo sure; funnel; a clock. Five Co'd-Pack Steps. The successive step ^ in this method are scalding or blanching, cold-dipping, packing the food in jars, sterilizing and scaling the jars. The blanching process is accomplished by putting the foo'b thoroughly cleaned, into a large piece of cho sedoth and lowering th's iat > a kettle f boiling water, leaving it immersed for the number of minutes ratio 1 for in the canning tinm sche tide. The blanching may ha done by su.-p 'ing the foo l in cheesecloth aho t.ho 1> tiling water in st> am. Ti is process is of great impoitanre, c'iminating ohjee'ionable acids, starting the* fl w of c 1oring matter and reducing the bulk of the ford. When food i blanched it mus< he cold-dipped imi> odiately after. The shock from boiling to cold w ter kills certain destructive bacteria, "sets" the coloring matter, and hardens the pulp under the sk?n Th" food in the cheoscclo'h should he lifted directly from the l)>i'ing water and plunged into a kettle ol very cold water. Jt sh uhl never b allowed to stay i.n the cold water but removed immediately an 1 drain ed, preparatory to packing. A wooden spoon is best for p mk inpr the food into jars, since jt dec not" injure tVie food as a sha'p spo'n might. When the jars arc p icke full and presrod down to insure ful uirs when finished, the jars shout be filled with boiling wider if tV food is a vegetable; and with eith? boiling water or syrup if it is frail The scalded rubbers and covers ar then placed on the jars, but nc sealed, lest the air expanding wue heated should blow the rubber or or break the jar. Next comes the sterlizing. Th S" rs filled with food are placed o e false bottom of the wash hoik in boiling water which sbru1 reach at least several inches abo< the tops of the jars. They must 1 left in the boiling water the oxa< period of time stated in the scV.edu for that particular food, and t;n should be counted from the secoi the water begins lumping ovo?- t1 entire surface. The cover sh' u then be kept on tightly until tin to remove the jars. "When the sterilizing is compleb the jars should be removed at < nc sealed and tested for leaks by i verting or lying on their sides whi cooling. Experts in this process cmphasi in addition to the necessity for i\ curacy the fact that there must no delay between the fiv 4 steps. From g vcrnment bulb 1 in a from various hooks pre arcd teachers of the coM-nnck nvth the housewife can find detailed re< pes for each food she may wish prepare in this way. \ r > m i ? ????mmmm*mmmm??
