Canning time is here again.
Strawberries are going, cherries
are coming, and then straight
through the summer there will be
vegetables of all descriptions, fruits
that will yield juices for jelly mak
ing, fruits to preserve?and f nally
the golden peaches of catly fall,
ripening to be canned whole, in

Time, sugar is scarce. Hut the
method of canning endorsed by the
United States department of agriculture
points a way around t1 U
difficulty. By the One-Period ColdPack
canning method fruits may he
canned without sugar. Hot water
instead of syrup is poured over the
fruit in the can before sealing. Of
course if a housewife has plenty < f
sugar and wants to use it, syrup is
quite in order?but it is not
necessary.
Absolute Accuracy.
The first requisite to success wit'*
cold-pack canning is ab-olute ac
curacy. Then, according to government
teachers of this method, one
must carefully unlearn all the lesold-time,

eated canning systems, such as the
"open kettle" method, and start
with an open mind to master the
five simple steps of the cold-pack
method.
There are several variations of
the cold-pack equipment for canning
including hot water baths with
homemade outfits and with c mmcrcial
equipment, water-seal out
fits, and steam pressure outfits. The
steam pressure outfits save time,
but home made equipment is quit
as successful and calculated to ap
peal to a majority of housewives by
reason of its economy.
Washboiler is Favorite.
A homemade outfit may be made
of such a receptacle as a washbciler,
a large tin pail, a lard pail, milk
can or a metal washtub. Such a
canner must have a well-fitting
cover and a false bottom or lifting
platform of wood or metal. This
false bttc-m is necessary both to sup
port the fruit jars and prevent them
from coming in direct contact with
heat, and also to pppmit a free circulation

Five Co'd-Pack Steps.
The successive step ^ in this
method are scalding or blanching,
cold-dipping, packing the food in
jars, sterilizing and scaling the
jars.
The blanching process is accomplished
by putting the foo'b thoroughly
cleaned, into a large piece
