M. Gauldrec called attention to the
method in vogue among the Romans
of parching and bruising tbe grains
of wheat, which in this state may he
made to yield au excellent and high
ly nutritious soup or porridge. The
corn is carefully Sifted by hand,
browned without charring, until It
breaks when taken between toe
teeth, and then ground in any avail
able mill; it is mixed with cold wa
ter, boiled for thirty minute, and
seasoned as*desired. So economical
was this preparation, that at the
public kitchens, established in cer
tain quarters of Paris, it was possi
ble to dispeuse ono portion of bouillie
romdine, together wpth a small modi
cum of wine, for the amoniit of five
centimes. - \
M. FremyN Ossine seems to bhre
been the moat successful device.
This substance is identical in compo
sition or isomeric with gelatine, bat
differs from It in thixt it actually ex
ists in organism, while gelatine is
produced by chemical transforma
tion. Bones oontatn thirty five per
cent of it it Is obtained by slicing
them very thinly and treating them
with dilate hydrochloric add. Ft
costs a franc a pound. It is swelled
with hot water, boiled for about a
half hour, seasoned or put in brine,
and if eaten warm with frit and veg
etables, ia palatable. But it will not
support life vary long nates it is
