When cooked in salt and water and
served plain they may bo good, but they
eau not be said to bo tempting. This
soup, however, is to lo recommended:
.Put ono pint of tho red part of the car
rot, grated, into a saucepan with half a
pint ot boiling wator, one teaspoonful
of boiling water, ono teaspoonful of
sugar and two tablespoonfuls of butter.
Cover closolysand Bimmor for ono hour.
At tho end of "this time add half pint of
biead crumbs and ono pint of white
stock and simmer for ono hour longer.
Then take tho pan from tho ibo and
strain the contents through a very lino
Riovo. Season with .salt.and popper and
?dd a cupful and a bait of hot milk.
Set tho pan with the strained soup up
on tho range and beat up tho yelks of
two eggs with half a cupful of milk.
As soon as the soup bolls up once add
tho eggs and milk; let all boil ono min
ute, stirring constantly, and servo with
out delay,
CnoQUKTTKS of calf brains aro rel
ished wlion prepared in this way: Soak
tho brains in cold water foi* ono hour:
wash them well and remove tho mem
brance, hoing careful not to mar their
appearance. Put them in a stewpan
with ono quart of wator, two table
spoonfuls of white wine viuogr.r and
halt1 a teaspoonful of salt and simmer
foi halt an hour. Mince tho brains
very lino with ono bolled sweotbroad,
vidding one saltspoonf ul of white pepper,
the yolks of two eggs, ono tablespoon
ful of cracker dust and just enough
milk to make a thick paste. Sot tho
paste on tho ice, and, when firm, mold
into croquettes; dip them in beaton egg,
roll iii lino crumbs and fry in hot fat.
Garnish with parsley and slices of lom
on and serve.
HICK AND CAUBAGE.--Wash a cab
bage thoroughly, cut. it in quarters and
put it on lo boil; take a breakfast cup
full of rico and put into a sopara to
sauceian with sufllcient cold salted wa
ler to cover it, and let that boil also;
when both are cooked (tho rico will take
twenty minutes), strain tho water off
the Cabbage, cut it up very small, add
lo it the rice, somo suet, pepper, salt or
a good lump of butter, stir all together
over the dre for'a few minutes and servo
hot. Should the rico not have absorbed
most of the wator in which it was
boded pour some of it away boforo add
ing the cabbage.
BEEK BALLS;-Chop cold corned
Ucl evenly and ?pi i to line; put into a
sa ti ce pam a cup of drawn butter, -hav
ing for Its foundation aomo of thc bq
uci iii which tho meat was boiled, flav
ored by stowing a little chopped onion
.n it, then straining itout before adding
a gi eat spoonful of butter rolled in one
of browned flour; whilo hot stir in two
beaten eggs, then the minced beef. Sea
son with popper only if the beef is well
salted; stir all over tho Aro (there should
be about two cupfuls ot tho chopped
meat) until very hot; sot away to get
cold and stiff, make Into round balls
about an inch and a half in diameter;
rei I iii beateu egg, then in pounded'
cracker, and fry In boiling fat. Drain
and dish.
BUTTERED ORANGES.-Take eight
eg es and the whites of four moro, with
: four teaspoonfuls of roso water; strain
through a bit of muslin or hair sieve;
add three-fourths of a pound of sifted
sugar, mixing well. Eut with the
strained juico of a dozen oranges and as
many lumps of sugar rubbed on the or?
anyo skins as will absorb tho zest. Sot
it over a gent?o Aro an enameled sauce
pan, and when it begins to thicken stir
in a tablespoonful of butter. When it
voaohes tho consistency of honoy pour
into a flat china dish. It is good to
serve with sponge .biscuits.
".wi;KT potatoes cooked in this way
in delicious for lunch, although they
are liked by many persons for dinner.
Alter boiling tho potatoes peel thom
and slice them lengthwise. Put a layer
pf the slices in a buttered dish; sprin
kle thorn with cinnamon and sugar and
put t iny bits of butter hore and there;
idd anothor layer of potatoes, sprink
ling Diem as before, and countinuo till
all aro used, putting a little moro bettor
on tho top ot tho last layer. Bake in a
good oven a delicate brown and servo.
SCR?rrbE.-Take a pig's head clean
it carefully and boil whole, until the
flesh falls from tho bones. Take out
all tho boncB, and when the meat is
cold chop it flue. Sive tho wator tho
head was boiled in, strain it, and thick
en with cora meal until about tho con
Bisteuoy-of mush, thou stir in the chop
ped meat, and cook until thoroughly

GUATE CATSUP.-Bail grapes until
?Oft, then proas through a coarse siovo.
To tl ve pounds of grape pulp add three
pounds of sugar, ono teaspoonful of
cinnamon, ono teaspoonful each of
cloves, pepper and allspice, ono grated
nutmeg, ono quart of vinegar. Boil
slowly until thick as tomato catsup,
then bottle.
VEAL CHEAM .SOUP.-Boll tho rom
.aants of a roust of veal until tho meat
Sails from tho bones. Strain and cool.
The next day put on to boil with a slice
of onion and one-third of a cupful of
r.aw lice. Lot it simmer slowly for an
hour. Add ?alt and pepper to ta9to.
Just before sorving add one cupful of
wich milk, or cream If you have It.heat
t;d in a separato dish.
' BROWNED POTATOES. - Boil with
tho skins on; peel quickly, taking care
not to break tho potatoes. Lay in a plo
?plate, pour half a cupful of strained
gravy over thorn, o*at each well with lt
and brown on the upper grating of tho

ventilated cellars and other places, with
decayed vegetables, korosone, &o. Tho
indiscriminating tasto of tho general
public is al?o a groat hindrance to Im
provement in tho manufacturo of but
ter. Some fow th oro aro who must
have really good buttor, and are willing,
if need bo, to pay a high prioo for lt;
but it has been raro for an ordinary
farmer to meet wthi such customers as
these,
Tlio general run of tho public do not
know high class from inferior buttor,
unless tho butter is vt ry bad. Tho
story is' well known of the clover grocer
who, when ho got a firkin of butler,
used to saw it in half and label ono half
twenty cents and tho oilier twenty-ilvo
cents; customers tasted and looked
knowing, and, generally came to tho
conclusion that for tho sake of flvo
cents they had better tako tho best; and
iivo firkiiia went oil at twenty-ilvo couts
a pound for ovory ono that was sold at
twenty coats. Tho fact is, there has
been such a quantity of inferior butter
forced on tlio market that peoplo havo
got used to it. Tho moat that can he
said is thatsoino is less bad Mian others.
Few know tho dclicato aroma and
nutty flavor o? tlio bo3t sweet cream
butter.
The great majority o? consum?is aro
content if they got butter devoid of
strong tasto or smell, heneo tho opening
for butlcrino, which is freo from bad
odor and has no unpleasant tasto, or
rather very little taste of any kind.
But tho remedy lies largely in tho hands
of the buttor producer, In tho first
place ovory effort should bo mudo to
manufacture a good article, and mar
ket lt in lin attractive shape. Second
ly, those who can and do make good
buttor should seek a market whoro
such product aro appreciated. If tho
local dealor pays ono prico for all but
tor, regardless of quality, tho butter
maker should transfer his business to
some dealer moro nearly abreast with
tho timos. Tho "ono price" dealer will
thus only get tho inferior article, and
ho will soon chango his policy. Whon
the practico of paying for buttor ac
cording to quality becomes general,
but little bad buttor will bo produced.
Cows AND SIUSHC.-Try to keep tho
milch cows up to tho amount of milk
given last month, if it is possible.
Even though tho grain may for a willie
cost moro ?than it would to accept a
smaller amount of milk for a time, yet
it is well to remember tho danger of
establishing a bad precedent, and If tho
cows shrink in milk now they will not
bo likely to increase their product again
until spring. Do not allow them to
run in mowing lands, or oven in pas
tures, excepting for a fow hours' exor
cise In pleasant weather, and then seo
that they have been well fed upon be
ing turned out, ns all they may eat of
tho frost-bitten grass or weeds is an
injury to thom greater in value tliau
tlio cost of tho food given at tho barn
would be. Go through tho Hock of
sheep once more, and seo if there aro
not others that should bo culled out
and made mutton of. This month

wheroby, tbo carbon being in excess,
tho stoam is decomposed Into equal
volumes of hydrogon and monoxide of
carbon; and, further, in leading these
gases over a largo surface of a highly
heated refractory substance in presenoe
of a fresh supply of superheated steam,
whereby tho burning of tho carbon to
dioxide is effected and another volume

been brought out by Mr. II. Crookes,
of Westminster Chambers. When cool,
or at normal temperature, it is a bril
liant red; but as tho temp?rature rises

is quite brown. As it cools, it regains
its original redness. This paint should
be useful for high-speed machinery, es
pecially if it will attain tho remarkable
property for any length of time.

on buttons with two or four holes
equally well, and at tho rate of six per

Dr. John Fercy in an address to tho
British Iron and Stool Instituto by the
statement that a gross of steel pons,
formorly costing $35 mlghc now be pro
