In a shoat or hog weighing
sixty pounds or less the back
bone cau be split, leaving half
for "ourbacue"and theu separate
each rib through' the siciu for
chops.
When cut out sprinkle half

pslor on each ham; use one part
granulated sugar, three purls
good sail; put hams iu tub or
box, let remain three days, break

salt. This is done to bo sure
that all parts of the ham get
their salt. Let it lie iu bulk oue

aud ground black pepper, wrap
in newspaper uud pack in barrel
with cut, nice hay between hams
to keep from touching.
This process is for hams from
hogs weighing 2o0 pounds or
less. Those who have few hams
c m treat the shoulders as hams.
For hams from hogs weighing
more than 250 pounds put in
brine described below for corn
beef and pickle pork, let lie for
four weeks uud then siuoUe tin
til dry and theu treat as for
lighter hams.
Cut the pork in pieces of suit
able siz ?, pack iu barrel. For
each 10J pounds of pork prepare:
C quarts good salt,
G gallons of water,
1 4 pounds saltpeter,
1 pound sugar,
1 pint molasses.
Mixed cold without boiling and
pour over beef. In a week's
time it will he ready for use,
and keep for a year. Corn beef
can b? made by using the above I
brine and packing it in a barrel. I
Hoil until thoroughly done, j
split the foof>, beginning between
the hoof, fry in batU*r as you
would fry chicken. Nothing
better about a hog. The ears
and skull below the eyes will do
for souse, but do not spoil feet to
make it.

gether, season with sage and
onions, put meal sufficient to
make a stiff dough, boil half an
