The existing situation calis tu*
further curtailment of wheat consumption,
and there is no better sub
vooitute,
and no substitute for wheat
bread that is to be had in such quantities,
as potatoes. We have not erough
wheat for our Allies and ourselves,
but we have an abundance, of
potatoes?an excess of 90,000 ;000
bushels over normal times. If we
are to win this war the Allied armies
and the Allied peoples must have
wheat. The potato cannot quite
up to wheat in food value, but
it does come about as close to taking

By eating more potatoes, therefore,
the people of South Carolina
can save more wheat to send to Europe.
Americans first realized how important
a part of their dailv food the
potato played when last year a scarcity
of this vegetable drove its price
almost to prohibition heights. When
plantng time came again, every one
planted potatoes. The farmers
