The cow requires not only
materials for maintenace, Lut
must also have protein, fat, and
carbohydrates to make milk
from. The milk contains water,
fat, protein (casein, or curd)
sugar, and ash, and these are all
made from the constituents of
the food. If insufficient protein
fat and carbohydrates are con
tained in the food given her, the
ow supplies this deficiency for
a time by drawing on own body,
and gradually begins to shrink
in quantity and quality of milk,
or both. The stingy feeder
cheats himself as well as the cow.
She may sutler from hunger,
although her belly is full of
swale hay, but she also becomes
poor and does not yield the milk j
and butter she should. Her
milk glands are a wounderful
machine, but they cannot make
milk ca*ein (curd) out of the
constituents in coarse, unappetiz
ing, indigestible swale hay or
sawdust any more than the far
mer himself can make butter
from skim milk. She must not
only have a generoos supply of
good food, bat it mast contain
sufficient amounts of the notri-
ents needed for making milk.
Cotton seed meal is the greatest
protein, food obtainable in the
south. Until this fact is under
stood and appreciated, successful
profitable dairying is oat of the
question.
